{stuffed peppers philly cheese style}

A spin on the stuffed bell pepper. So many of you have made + tagged me in my OG {stuffed bell peppers} recipe. Which makes my damn day. Each and every time. I’m gonna tell you, if you like the original stuffed bell peppers, then you’re going to DIE over these philly cheese style peppers.

This recipe was one my Mom found on her instagram. Tried it out and it was a BIG hit. Not only for she + I, since we’re currently doing Weight Watchers. But, my picky Dad and tween also really liked this recipe too. It’s hard to find a WW friendly recipe that the whole fam bam approves. So, this one right here…..It’s a keeper!

Here’s the recipe for ya! Don’t be intimidated by the list of ingredients. It looks like a lot of items, but I found that I had the spices + sauces + broth already on hand.

{stuffed peppers philly cheese style}

Here’s what you’ll need:

  • 1 lb extra lean ground beef
  • 2 teaspoons olive oil
  • 8 oz package button mushrooms, finely chopped
  • 1 cup red onion, chopped
  • 4 bell peppers, 1 chopped, 3 cut in half lengthwise
  • 2 tablespoons flour
  • 1 1/2 cups beef broth (low sodium)
  • 2 tablespoon Worcestershire sauce
  • 1 tablespoon franks hot sauce
  • 1/2 teaspoon oregano
  • salt + pepper
  • 2 oz light cream cheese
  • 2/3 cup shredded cheese
  • cooking spray or Misto

Here’s what you’ll do:

Preheat oven to 400 degrees. Line a rimed baking sheet with foil or silicone baking mat.

In a large pan over medium heat add beef + salt + pepper. Break up with a spoon as the beef browns. Drain and set aside.

In the same pan add olive oil + mushrooms + onion + 1 chopped bell pepper + salt + pepper. Cook till soft. About 4 minutes.

Place browned beef with veggies in the pan. Add flour and stir to coat.

Add 1 cup of broth + Worcestershire + hot sauce + oregano + salt + pepper + cream cheese. Stir together till cream cheese is melted.

Place peppers, sliced lengthwise on prepared baking sheet.

Stuff each pepper with philly cheese mixture and top with shredded cheese.

Pour remaining 1/2 cup of beef broth in the bottom of the baking sheet. Make sure you’re using a rimed baking sheet.

Spray tops of peppers with cooking spray or Misto.

Cover with foil and bake for 30 minutes. Uncover and bake 10 additional minutes till cheese is nice and melty.
