ONE – Emily Murphy Designs // Tuesday evening I had the pleasure of attending a Hand Lettering & Sign Workshop with my Omega Nu sisters. We started with wine, of course. It literally helps get your creative juices flowing…lol. Not only is Emily crazy talented, but she’s an amazing instructor. We all left with works of art. Logos. Family names. Businesses. You name it. With a little, okay – a lot of help, I was able to create my blog logo. I still can’t believe how great it looks. Even Bay was wayyy impressed. TWO – Spaghetti with Veggie Sauce // Don’t knock it till you try it. I saw my girl Beth at Seersucker + Saddles add roasted veggies to her sauce the other night and thought….that is damn brilliant. Tried it, without telling Bay what I’d done. Here response, well you can see above! She had NO clue I packed one of her fave meals full of veggies and spinach. And it’s so simple. Which you know I’m all about. Just cook you’re meat of choice, I tend to use ground turkey since my peeps don’t seem to mind. Add part of your sauce to a blender. I used a Ninja. Pile in all the leftover roasted veggies. On hand this night, I had broccoli + carrots + onion + zucchini. Then lots of fresh spinach. Blend it up. Add the the “green” sauce and your regular spaghetti sauce to cooked meat and allow to simmer. Served my veggie sauce over carrot noodles. They are hands down my #1 veggie noodle. Bay had hers over regular spaghetti noodles. This is a total WIN for all Mom’s. Try it and let me know what you think!
