Just a friendly reminder: remember to eat a fucking salad!
Eating a salad is always a good idea!
And I’ve got The Best Quinoa Salad for you today!
I’ve tried so many quinoa salad recipes and they never do it for me. To be honest, I’d rather go to the Nugget salad bar and pay $10 for a big ol scoop of their quinoa salad.
Then I dissected the Nugget salad one day and came up with a winner!!!
Here’s what you’ll need:
- 1 15oz. can chickpeas, rinsed + drained
- 1 cup quinoa
- 1 cucumber, seeded + chopped
- 1 red bell pepper, chopped
- 3/4 cup red onion, chopped
- 1 cup flat leaf parsley, chopped
- 1 can chopped olives
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice (2 lemons)
- 1 tablespoon red wine vinegar
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 cup feta cheese
Here’s what you do:
Cooke quinoa according to package. Allow to cool.
In a large bowl, combine chickpeas + cucumber + bell pepper + onion + olives + parsley. Set aside.
In a small bowl, whisk together olive oil + lemon juice + vinegar + garlic + salt + pepper.
Add quinoa to the large bowl with veggies. Drizzle dressing over the top and combine well.
Chill for 30 minutes.
Top with feta cheese + serve!
I’m tell you guys, this is a keeper. It’s keeps me away from the Nugget salad bar 🙂
Next time I’m going to add edamame. I couldn’t find it at the grocery store so I skipped it, but I think it would be a great addition!
