Such a sad day for our country. Waking up to the horrific news reports really stops you in your tracks. My heart goes out to all the people + families suffering in Las Vegas. There are really no words. I just can’t shake it today. And I feel as though there is nothing I can do, except be kind. Do something nice for someone. All this hate has to stop!
Blueberry Coffee Cake //
Sometimes, every once in a while, you have to just say fuck it and make cake for breakfast!!!
and the secret ingredient…..
Crumbly cinnamon + brown sugar topping sandwiched between rich layers of coffee cake. You guys, this is a good one.
I will be pulling this recipe out again during the holidays, that’s for sure!!
Here’s what you’ll need:
- 1 cup butter, softened
- 2 cups sugar
- 2 eggs
- 1 cup sour cream
- 1 teaspoon vanilla
- 1 5/8 cups flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh blueberries (frozen work too)
- 1/2 cup brown sugar
- 1 teaspoon cinnamon
- 1/2 cup walnuts, chopped
- 1 teaspoon powdered sugar – for dusting
Here’s what you do:
Preheat oven to 350 degrees
Grease bundt pan. A 9 inch baking dish works too.
In a large bowl, cream together butter + sugar until light and fluffy. Beat in the eggs on at a time, then stir in sour cream + vanilla.
Combine flour + baking powder + salt, stir into the batter until blended.
Fold in blueberries.
Spoon half of the batter into prepared pan/baking dish.
In a small bowl, stir together brown sugar + cinnamon + walnuts.
Sprinkle half of the walnut mixture over the batter in the pan.
Spoon renaming batter over the top, then sprinkle with remaining walnut mixture.
Bake for 1 hour.
Invert onto a serving platter.
Dust with powdered sugar just before serving.
