{weekend notes}

 

The weekend came and the weekend went.  Just like that.  Back to work.  Back to school.  Back to the weekly grind.  And I’m ready for it.

How was your weekend?  Too fast?  Yep, ours too.  Here are some of the highlights……

 

Friday night at Blue Note Brewery.   This has become our Friday night meeting spot.  Beers + catch up sesh with the family.  And I love it.

Tio + the kids played hookie and went to Six Flags.  No ASES camp for these little crazies.  Perfect ending to Spring Break.

Pizza Pizza!  And wine.  Have I mentioned that I love pizza?  Kidding….lol!  Everyone knows my love for pizza is real.  Real BIG!  Especially Steve’s pizza.

Watching Joe + his travel ball team play.  Joe got his first hit.  Racking up $100.  Not bad kiddo, not bad.  He text me “where you at” after his game to collect.  Love him!!!

Strawberry picking at Pacific Star Gardens.  Have you ever checked  this place out?  It’s the little tented produce stand on Co Rd 99.  Pacific Star announced last week that their certified organic Chandler strawberries were ready for picking.  And Bay found a strawberry shortcake trifle recipe that she was dying to try out.  It was meant to be!!

Grab one of these buckets.  Follow the strawberry signs out to the berry field.  Pick as many as your heart desires.  I guess the key is go early.  We were later in the afternoon, but still plenty of ripe berries for these kids to pick.

When you go back under the tent to return your bucket, there is a scale to weigh the berries.  At $3/lb you really can’t beat it.  Stick cash in the slot and your good to go!

Impromptu Easter egg hunt.  When you’ve got filled eggs, you throw them out in the grassy field on Gibson and let the kids loose.

DK’s Pizza fun!  Pizza two nights in a row?  Sure, why not?  And they all needed a turn to spin the wheel!

 

As you can see, Charley won an ice cream cone.  That face though!!!

Riding with Papa.  Loaded up the bikes and headed to Prarie City for the morning.  My Dad has all three grandkids on dirt bikes now.  They love it.

Bay baked!  Well, kind of.  More like assembled.  Strawberry Shortcake Trifles.

Taste testing the homemade whip cream.  As you can see, it was pretty damn good!

Bay agreed that I could share her recipe with you all today……

Strawberry Shortcake Trifles

Here’s what you’ll need:

  • 2 lbs strawberries, quartered
  • 2 cups heavy cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla
  • 8 inch angel food cake, cubed (I picked one up at Nugget)

 

Here’s what you do:

Chill your mixing bowl in the fridge.

Sprinkle quartered strawberries with a teaspoon of sugar and stick in the fridge.  Bay says this is very important 🙂

Once mixing bowl is chilled, place heavy cream + sugar + vanilla and mix on low till sugar and heavy cream are combined, then set mixer to high till soft peaks form.

Note: I don’t like whipped cream at all, and I could have eaten the whole bowl.  Homemade whip is the only way to go, as I found out this weekend!  

To assemble:

Layer cake, strawberries and whipped cream in that order.  As many layers as you can fit!

Top with a whole strawberry and chill till ready to serve.
