This is an easy 15 minute healthy dinner. Bailey loves it so that’s a plus too.
So simple, but such great flavors. Garlic + scallions + soy sauce + honey. Plus, it’s healthy and comes together in a snap. Kaia friendly too!! Chicken + Asparagus are items that you will always find in my fridge and freezer. They are some of our staples.
Here’s what you’ll need:
- 2 Tablespoon soy sauce
- 2 Tablespoon honey (seka hills, of course)
- 3 boneless, skinless chicken breast, cut into bite-sized pieces
- 1 Tablespoon olive oil
- 1 bunch asparagus, cut into bite-sized pieces
- 2 cloves garlic, chopped
- 2 scallions, chopped
- 2 teaspoons sesame oil
- 2 teaspoon toasted sesame seeds
Combine soy sauce + honey. Place in a ziplock bag. Add chicken.
Tip: I like to cut my chicken into bite-sized pieces while still partially frozen, it makes it super easy.
Set in refrigerator until ready. I did this step before work. Made my dinner prep a cinch.
Heat oil in a large skillet over medium-high heat. Saute asparagus until cooked, about 5 minutes. Remove asparagus and set aside. Remove chicken from marinade and add to same skillet. You may need to add a tad more olive oil. Saute until nearly cooked through. Then add garlic + scallions + marinade from ziplock bag to the skillet. Cook for 2-4 minutes. Remove from heat and stir in sesame oil. Don’t skip the sesame oil, it’s important. Serve immediately over quinoa + brown rice mixture garnished with toasted sesame seeds. Voila!!

Kaia girls – what do you do on your Kaia free days? Workout? Sleep-in? Stretch? This whole BRIK session I’ve walked on each of my free days. Which are only Wednesday + Sunday. My girlfriend Sarah and I meet at Oasis and do a 3.68 mile loop. The fresh air first thing in the morning get’s me going. It’s a nice change from indoor workouts. Not to mention, getting to catch up with a bestie while getting our steps on. Wednesday mornings I’m sure to get a fitbit vibrate (goal notification) before I even step foot into my office. It makes me feel so accomplished.
