
With the Fall weather we tend to go with more hearty soups + pastas. But, this girl still craves a good green salad. I’m currently hooked on arugula. It’s so pepper + delish, I can eat it daily and not get sick of it. I’m really trying to be better at sharing recipes so today felt like the perfect day to share this goody!
This salad is packed with ALL THE THINGS FALL. Warm roasted sweet potatoes. Pilled high over arugula. Then throw on the toppings. Avocado, duh. Can you even have a salad with out avo? Nah. Feta cheese. But, blue cheese or goat cheese would be BOMB too. Toasted slivered almonds. I found them in the salad dressing aisle at Target. Again, any toasted nuts would do the trick. And crasins. I could eat them by the handful.
All pulled together with a light dressing.

This salad is the perfect pair to just about any main course. It’s hearty + so good. I hope you guys love it as much as I do!

{the perfect fall salad}
Here’s what you’ll need:
- 1 tablespoon olive oil
- 2 sweet potatoes, peeled + cubed
- salt + pepper
- 1 bag arugula
- 1 avocado, peeled + sliced
- 1/2 cup feta cheese (blue cheese would be good too)
- 1/2 cup toasted almonds, chopped
- 1/2 cup crasins
For the Dressing
- 3 tablespoons olive oil
- Juice from 1 lemon
- 1 teaspoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Here’s what you’ll do:
Preheat oven to 400 degrees. Line a baking sheet with a silicone pad or foil.
Spread the diced sweet potatoes out on a baking sheet. Drizzle with the olive oil, and toss until the sweet potatoes are evenly coated. Season with salt and pepper.
Bake for about 30 minutes. Remove + allow to cool.
While potatoes are roasting, make the dressing. Add all dressing ingredient to a mason jar. Shake it well and pop in the fridge until ready to assemble the salad.
When ready to assemble salad, add sweet potatoes + arugula + avocado + feta cheese + almonds + crasins. Drizzle dressing and toss.
