Speaking of cinnamon rolls – You guys were VERY into the cinnamon roll recipe that I shared on stories yesterday morning. And since we don’t do anything very exciting on the weekends anymore, this seemed a little more fitting than the typical weekend notes.

You guys, does this picture make your mouth water too? OMG!

So, we’ve been ordering the Micaela’s California Fresh Pizza Kit each week. I think it’s one of the most brilliant ideas Charley + Brooke could have come up with during quarantine. I don’t know about you, but my family is BIG on pizza. So jump on it each week.

This week, though, I kicked around trying something new. Something different, but using the pizza dough. My Mom actually gave me the initial idea. And Cory + I ran with it!

All I have to say is – get the pizza kit. If you’re not local, you can always make homemade pizza dough. Don’t ask me now though haha!

Just think – lots of butter. Lots of cinnamon. Lots of brown sugar. With a creamy layer of cream cheese frosting on top!

Here’s what you’ll need:

Cream Cheese Frosting:

  • 1 (8 ounce) package cream cheese
  • 1 cup butter, softened
  • 4 cups confectioners’ sugar
  • 2 teaspoons vanilla extract
  • 2 tablespoons milk

Here’s what you’ll do:

Grease a 9×13 baking dish. Liberally! (the more butter the better)

Divide the pizza dough in half.

On a lightly floured work surface, use a rolling pin to roll 1/2 of the dough into a large rectangle. About 12 x 16.

Spread 1/2 of the butter across the dough covering the entire surface all the way to the edges.

Combine brown sugar + cinnamon + salt. Sprinkle 1/2 of the mixture across the butter in an even layer.

Roll the dough tightly forming a log. You will end up with a cinnamon roll log about 12 inches long.

Using a sharp knife slice the dough into 9 equal sized cinnamon rolls.

Place the cinnamon rolls into prepared baking dish.

Repeat with the remaining dough + butter + sugar mixture.

Cover the baking dish with a kitchen towel and allow to rise overnight.

When ready to bake, the cinnamon rolls will have almost doubled in size.

Preheat oven to 350 degrees

Bake cinnamon rolls (uncovered) for about 25-30 minutes. Checking frequently after 20 minutes.

While cinnamon rolls are baking, prepare the cream cheese frosting.

Using a mixer, blend cream cheese + butter together. Gradually add sugar + vanilla. If the mixture is too thick, add 1 tablespoon of milk at a time to loosen up the frosting.

Spread the cream cheese frosting over the fresh-from-the-oven cinnamon rolls!
