
Happy Hump Day peeps! Tonight is our annual annual family pumpkin carving competition. Debating if I want to get tips…..or carve a pumpkin. Hummmm! Plus we’re celebrating my Dad’s birthday. I foresee lots of red wine. Mom’s Famous Chicken Tortilla Casserole (it’s a tradition) and laughing till we (almost) pee our pants. It’s just how we roll.
I haven’t shared a recipe in a bit, so I thought I better get one up today.
If you’re down with healthy + easy + flavorful + one pan meals….
Then I got you!
I made this Thai Turkey + Carrots dish last month. It was so good, I made it the other night. I was craving it. Then I realized I never shared the recipe with you guys.
Think turkey cooked in coconut milk + broth with and all the yummy spices. You get sweet + spicy + salty all in one.
This legit takes 15 minutes. It’s clean AF. Weight Watchers friendly. The only ingredients that have points value is the coconut milk and peanuts. Everything else is ZERO! I picked up all my ingredients at good ol Trader Joe’s. Except for the Franck hot sauce. Which you should already have in your fridge. Because that shit is bomb!
This recipe is 3 points per serving. Add 1/2 cup of brown rice and add an additional 3 points…..which in my opinion is well worth it! Bay loved this dish. And I took the remaining two servings for lunch. Reheats great and makes for a delish + filling meal.

thai turkey + carrots

{Thai Turkey + Carrots}
Here’s what you’ll need:
- 1 tablespoon olive oil
- 1 lb lean ground turkey
- 1 red onion, diced
- 1 garlic clove, minced
- 3 cups carrot noodles (I used a package of Trader Joe’s Carrot Spirals)
- 3 tablespoons low sodium soy sauce
- 1 cup canned light unsweetened coconut milk
- 1/3 cup low sodium chicken broth
- 1 tablespoon Franks Hot Sauce
- 2 tablespoons red curry paste
- 1/4 cup cilantro, chopped
- 2 tablespoon fresh lime juice
- 2 tablespoons peanuts, chopped
Here’s what you’ll do:
Preheat oven to 375 degrees
If using brown rice, prepare according to package directions. I swear by Trader Joe’s frozen brown rice. Takes less than 10 minutes.
Using an oven proof skillet or cast iron, drizzle with olive oil. Add turkey + onion + garlic. Cook over medium heat till turkey is browned.
Stir in carrot noodles + soy sauce + coconut milk + chicken broth + hot sauce + red curry paste.
Transfer skillet to the oven and cook for 10 minutes. Till carrots are tender and sauce had reduced.
When ready to serve, add fresh lime juice + cilantro.
Add 1/2 cup of brown rice to bowls. Top with 1 1/2 cups of turkey + carrot mixture. Top each bowl with chopped peanuts.
