Hallelujah….kids are FINALLY back in school. Insert happy dance! Doesn’t if feel like they’ve been on break for an eternity? Bay’s been sleeping till about 10 am each day, so to my surprise, I heard her alarm go off at 5:45 am. And she actually got up…ha! She set her alarm extra early so she could curl her hair. Remember when she got the Conair Infiniti Pro Curl Secret? Bay can curl all her hair all on her own. And I don’t have to worry about her burning herself or our house down. Coolest curling tool for kids.
What I’m really here to talk about today is my Healthy-ish Chicken Salad recipe though. Now that Bay’s back in school and we’re back to our regular routine, I’m ready to tackle the new year. Even though it’s day #8 and not day #1. Better late than never, right?
I meal prepped like a boss over the weekend. Chicken Fajita Bowls. Chili Lime Walnuts. Washed + chopped all our veggies for the week. Hard boiled eggs. Made dressings + sauces. And lastly, this Chicken Salad.
My Mom tried it for lunch yesterday and gave it two thumbs up! Whoop Whoop!
The walnuts give it the best texture and crunch. I wouldn’t ever ruin a recipe by adding fruit, but I’m sure you fruit lovers out there would dig grapes in this? Sounds disgusting to me though. HA! I added a grainy Dijon mustard and some white vinegar. I’m telling your, it’s really good.
I’ve wrapped it in a gluten-free tortilla and had it over greens so far and loved it both ways. My mom made a sandwich with it. You could even eat it alone. Or with crackers. I’m obsessed with Mary’s Gone Crackers
Before we get to the recipe, I have to share this new product I found at good ol Walmart. Chobani Squeezable Low-Fat Greek Yogurt. For the record, I don’t really care for Greek yogurt. Or any yogurt for that matter. But, I do love a full fat Best Foods mayo like a fat kid loves cake. And I’m really diggin this stuff. I’ve been subbing it for everything lately and I shit-you-not, I do not notice a difference. And that’s BIG, coming from a mayo spoon licking gal, like myself.
Nutrition: 2 tablespoons. 20 calories. 0.5 fat. 1 carbs. <1 sugar. 3 protein.
Ingredients: low-fat yogurt (cultured pasteurized non-fat milk, cream)
healthy-ish chicken salad
Here’s what you’ll need:
- 2 chicken breast, cooked + shredded (about 2 cups)
- 1/2 cup celery, chopped
- 1/8 cup red onion, diced
- 1/2 cup walnuts, toasted + chopped
- 1/4 cup Chobani Squeezable Low-Fat Greek Yogurt
- 1 tablespoon mayo
- 1 teaspoon Dijon mustard
- 1 teaspoon white vinegar
- Salt + pepper
Here’s what you’ll do:
For the chicken, I boiled 2 chicken breast in chicken stock for 15 minutes. Rotisserie chicken would be perfect too. Or leftover chicken in the fridge. Trader Joe’s sells “just chicken” and it’s really convenient and good. Pre-cooked and chopped for you!
In a small pan, toast walnuts over medium heat. Give them a shake every minute or so. Once you can smell them, they’re done. Chop and set aside to cool.
In a large bowl, add all the ingredients. Everything. Stir to combine well.
Cover and pop in the fridge for about 2 hours.
Serve over greens. Make a wrap with your fave tortilla + greens + avocado. Have a sando.
