{walnut honey oatmeal balls}

Walnut honey oatmeal balls!  Easiest recipe I’ve ever posted.  No bake.  Six ingredients.  10 minutes to prep!

Shit you not – these taste just like oatmeal cookie dough.  I got your attention now, didn’t I?  Ha!

These sweet + salty little treats are perfect for a grab and go snack.

Mini snacks are kinda my jam.  Makes me feel like I’m not being thattttt bad.  Know what I mean?

Walnut honey oatmeal balls are the perfect size to nip that sweet tooth in the butt!

Chances are you already have all these ingredients in your pantry!  So, I think you should give it a shot + let me know what you think.

Here’s what you’ll need:

  • 2 1/2  cups old fashion oats
  • 1 cup walnuts
  • 1/3 cup melted coconut oil
  • 1/2 cup honey
  • 1 tablespoon vanilla
  • 1/2 teaspoon salt

 

Here’s what you do:

Line a baking sheet with a parchment paper or a silpat.

Dump all ingredients into a food processor.

Pulse until mixture sticks together.

Using a cookie scoop or spoon, place tablespoon sized portions onto prepared baking sheet.

You should get 20-24 granola balls.

Pop in the fridge for 1 hour.

Once the granola balls are firm, use your hands to roll into smooth bites.  Or skip this part.  They taste the same perfectly round or not…just saying!

Store in an airtight container in the fridge.

You could even drizzle melted chocolate over the top of them.  OMG!  Doesn’t that sound so good?  Oh and how about some cinnamon?  Raisins, possibly….if that’s your thing.  Personally I wouldn’t want to screw up any oatmeal cookie with that though.
