Sun’s out, fun’s out!  Buns out too!  Burger buns, that is 🙂

Remember Friday when I asked you guys on Instagram Stories what you wanted to see today?

It was really close, but the wining vote was for Mexican Burgers!

I think it’s safe to say that most of us will be enjoying something off the barbecue today.  If you’re throwing some burgers on the barbie, then you’re gonna want to keep reading…..

Meet my new best friend, the Mexican Burger!  You know I love jazzing up the ol classics!  And this one is nothing short of that.

I used to ALWAYS buy the pre-formed burgers at the grocery store.  Which will 100% work with this recipe!  Store bought guac + pico will do the trick too.  Making your own burgers is definitely the way to go though.  It takes minimal effort.  A couple seasonings.  And you know exactly what’s in them!  You can certainly taste the difference.

 

Here’s what you’ll need:

For the Burger:

  • 1 lb ground beef
  • 1/4 cup diced onion
  • 1 egg
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 cup panko bread crumbs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

For the Guac:

  • 2 ripe avocados
  • 1/2 lime, juiced
  • salt + pepper

For the Pico: 

  • 3 tomatoes, finely chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/2 tablespoon jalapeno, finely chopped
  • 1/2 lime, juiced
  • salt + pepper

Toppings:

  • Buns
  • Cheddar cheese
  • Lettuce

 

Here’s what you do:

Mix all the burger ingredients by hand.  Shape into 4 thin patties.  Make a thumb print in the center of each burger.  I read that this helps them not puff up as much?  Could be totally incorrect, but I do it anyway!  Pop burgers in the fridge till ready to grill.

Make guac…I think it’s pretty self explanatory.

Same with the pico.

Grill burgers to desired done-ness.  I like ours medium-well.

Butter some buns and throw on the grill for a minute or two.  Or lettuce wrap them.  I tried these burgers both ways and thought they were kick ass either way!
