Whether it’s your birthday or not, this Funfetti Crumble is loaded with sprinkles and perfect for any celebration. Or any day, let’s be real.
Have we chatted about funfetti before? I’m sure we must have? It’s essentially white cake, but filled with fun colored sprinkles. Kids love sprinkles. Shit, I love sprinkles. Who doesn’t love sprinkles? My sister’s wedding cake was funfetti. Swear! We kinda like it…a lot!
Who didn’t grow up in funfetti cake with rainbow chip icing?
In celebration of Bay turning the BIG 11 yesterday, I wanted to surprise her with a fun + festive breakfast. It totally didn’t work out. I mean, the recipe was a winner-winner. But after multiple donut deliveries (thanks Alex + Baby Daddy), we decided we’d save the Funfetti Crumble Cake for this morning.
Her reaction. WOW! “That’s not bread, that’s cake!” I was originally was calling if Funfetti Bread. Which was so not what this is. It’s cake! In the shape of a loaf of bread. With TONS of sprinkles on top and inside. Minus the frosting. Trust me…you wont miss the frosting after you try that crumble topping. It’s seriously legit!!!
Here’s what you’ll need:
- 1 cup butter, softened
- 1 1/2 cups sugar
- 4 eggs
- 1 egg yolk
- 2 teaspoons vanilla
- 2 cups flour
- 1/2 teaspoon salt
- 1/3 cup rainbow sprinkles
Crumble topping:
- 1/4 cup sugar
- 1/4 cup flour
- 1/4 cup rainbow sprinkles
- 2 tablespoons cold butter, cut into pieces
Here’s what you do:
Spray loaf pan with non-stick spray or line with parchment paper
Using a mixer, cream together butter + sugar until light and fluffy
Add whole eggs + egg yolk one at a time
Add flour + salt + vanilla. Mix until combined
Stir in sprinkles
Pour batter into prepared pan
To make crumble topping:
Combine all crumble toppings in a small bowl. Using the back of a fork mash butter pieces until crumbly.
Top batter with crumble topping
Bake for 1 hour + 10 minutes. Or until center is set and a toothpick comes out clean
Allow to cool.
Slice + serve with a glass of milk!
