{bay’s chocolate chip cookie bars}

Due to scientific recipe testing, Bay says mini chocolate chips is all she’s willing to bake with anymore.  Basically she believes that more chips per bite it what it’s all about.  I am very much down with that!

Bay wanted to bake.  Can you imagine that?  Ha!  She pulled out her trusty kitchenaid and we raided the pantry for goodies to make a delicious creation.  Obvi it was a HIT!  That’s why I’m sharing it with you all.

Most likely you have all the ingredients in your pantry too, so let your kiddos make you a batch for dessert.  You will be happy you did 🙂

Here’s what you’ll need:

  • 1/2 cup butter, room temp (buy the real shit)
  • 1/2 cup powdered sugar
  • 2 tablespoons honey (Seka Hills honey is the ONLY way to go)
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 3/4 teaspoon salt
  • 1/2 cup MINI chocolate chips

Here’s what you do:

Preheat oven to 350 degrees.

Spray a crap load of pam all over and around your 8×8 pan (or something similar sized)

Using a mixer, combine butter + powdered sugar + honey.  Mix on medium speed until fluffy, about 1 minute.  Add vanilla extract and mix until combined.

Slowly add flour + salt, mix until the flour has formed into a dough.

Sprinkle in the MINI chocolate chips and mix with a spatula, by hand.

Spread cookie dough into your pan.

Bake 20 minutes.  ONLY 20 minutes.  The edges will be lightly browned.  The center may not look completely set, but trust me ONLY 20 minutes.

Cool.  Remove from pan (it will slide right out).  Slice into bars.  Serve warm for the ultimate cookie dough texture.  Or room temp for a more chocolate chip shortbread effect.
