Get this SUPER DELICIOUS + super good-for-you egg casserole on your to-do list!!
Although this is vegetarian, you can totally throw in some of your fave breakfast meat. Bacon? Sausage? Both would be a bomb.com addition!
Here’s what you’ll need:
- 8 eggs (whites if your being a super healthy bitch)
- 1 cup cottage cheese
- 1 teaspoon Italian seasoning
- Salt + pepper
- 1/2 cup shredded cheese (any flavor will do)
- 2 cups of any veggies (what I used is listed below)
- Asparagus, blanched
- Mushrooms, sliced
- Cheery tomatoes halved
- Green onion, chopped
- Parsley, chopped
*Any variety of veggies will do the trick, these are just my go-to when I whip up this recipe. You can grab any leftover veggies from your fridge and I promise this will be a hit!
Here’s what you do:
Preheat oven to 350
Mix eggs + cottage cheese + Italian seasoning + salt + pepper + 1/4 cup cheese + parsley + green onion.
In a deep greased dish (I use a 9×9) pour half of the egg mixture.
Layer 1/2 of your veggies over the egg mixture.
Pour the rest of your egg mixture over the top. Then the rest of your veggies.
Top with remaining shredded cheese.
Bake for 40 minutes. Or until eggs are set.
