{curried chickpea salad sliders // love + lemons}

It’s Kaia detox week.  I’ve been doing pretty good!  I mean, I daydream about pizza like all damn day.   And what I’m going to eat next…lol.

This is pretty accurate!  Don’t lie, you know pizza sounds so good right about now!!

Anyway, I’m passing up the cheesey goodness for vegan + gluten-free + Kaia friendly this week.  And I found a yummy recipe I wan’t to share with my Kaia girls.

Curried Chickpea Salad Sliders from Love + Lemons

September hit and everyone is saying happy fall.  Except it’s 100 damn degrees outside.  It’s hot AF!  Which also means, I don’t want to cook with my stove or oven.  My kitchen cooks…literally.  You turn either on and the temp rises at least 20 degrees.  No joke.  Anyway, I’ve been making pretty easy meals this week.  I came across another Love + Lemons recipe that is vegan + gluten-free + Kaia detox friendly!!

I’m on day two of mowing down on these lettuce wraps and I totally dig them.  The curry adds such a unique kick that makes this recipe pop.  If you’re not sure about the curry then use 1/2 of what the recipe calls for.  Or swap with your favorite spice.

Here’s what you’ll need:

  • 1 can chickpeas, drained + rinsed
  • 1 avocado
  • 1 tablespoon tahini
  • 1/4 teaspoon garlic, minced
  • 1/4 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/4 cup walnuts, chopped (or hemp seed)
  • 1/2 teaspoon madras curry powder
  • 1 lemon juiced
  • fresh black pepper

Instructions:

In a bowl, combine chickpeas + tahini + garlic + curry powder + lemon + pepper.  Add onion + cilantro + walnuts and stir to combine.  Season with pepper.  Chill until ready to serve.  Add avocado + serve.

ps – I used good ol McCormick curry powder.  My local grocery store didn’t carry madras curry or at least I didn’t find it.

And Trader Joe’s Tahini is easy and legit.  Get some.

That’s it.  Took me about 5 minutes to prepare.  The recipe calls for mashing all the ingredients, which would make it easier to eat.  I skipped this part.  Mainly because I didn’t read the entire recipe…lol.

I served mine with sliced avocado in butter lettuce wraps.  It’s detox weeks peeps.  Otherwise I would have splurged on the Trader Joe’s Pretzel slider buns with all the normal fixings.  Lettuce + tomato + mayo (I ♥ mayo).

A tip from Love + Lemons that I’ve never heard of before…

If you’re sensitive to raw onion, rinse + dry onion to remove some of the bitterness.

I added this recipe to My Fitness Pal  for nutritional facts and here’s what I got:

8 sliders

calories: 210

fat: 13.8

carbs: 15.9

protein: 7.8

I eat two each time and it’s pretty filling.  You could totally sub shredded chicken and I think it would be BOMB!!
