Friday 5, lets do it –
ONE – Last night I whipped up this baked polenta with sausage and artichoke hearts with a big green salad and grilled asparagus. BOMB. Martha Stewart never disappoints. It’s an easy weeknight dinner that delivers.
Check out the recipe :
2 teaspoons olive oil
1/2 white onion, thinly sliced
1 pound sweet italian sausage
2 garlic cloves, chopped
3/4 cup marinated artichoke hears, coarsely chopped
1 tube prepared polenta, cut into 1/4-inch rounds
1/3 cup chicken stock
1/4 cup fresh parsley, coarsely chopped
salt + pepper
** I added sun-dried tomatoes and parmesan too, do it!!
Preheat oven to 400 degrees. In a large skillet, heat oil over medium. Add onion and cook 5 minutes, until softened. Add sausage and cook, breaking up meat with a wooden spoon, until browned, 8 minutes. Add garlic and cook until fragrant, 30 seconds. Remove skillet from heat and stir in artichokes; season with salt and pepper.
In a 2-quart baking dish, layer polenta rounds and spoonfuls of sausage mixture. Pour stock over top and bake until bubbling and polenta is pale golden, 20 to 25 minutes. Sprinkle with parsley and serve.

TWO – My tribe // it’s been almost two years since the seven of us have all been present in the same place at the same time. We are busy bitches, let me tell you. Even Doodle.com can’t help us out 🙂 But that’s ok, because when we unite, it’s worth it. Some of us went to school together, some of us met though our kids, and some from the famous “mom’s” group. Not only are we great friends, but our kids are too. We’ve got this crazy magnetic bond that I hope lasts FOREVER!!

THREE – Guess what? I ate fruit. Like everyday this week. Haha. If you know me, then you know I despise fruit. I have NO idea what made me this way. Maybe the texture? Who knows. I picked up some Satsuma oranges from Nugget last weekend and I LOVE them. Wish we would have met sooner.

FOUR – Christmas Jams. They have to be the most adorable jammies I’ve layed eyes on. We have tickets to the Polar Express in a couple of weeks and wearing your Christmas PJ’s are a must. I have to admit, I didn’t get a baggin deal, but I also did not pay full price. I would have though. They frickin glow-in-the-dark peeps. The little lights glow. That’s a big deal for the 9 and under crowd. I’m going to surprise Bay with them on St Nick Night.
So, shhhhh….keep it a secret.

FIVE – How exactly did this happen? ONLY 34 days till Christmas. 5 weekends. 4 whole weeks. 33 sleeps. SHIT! I need to get my ass in gear. I have amazing ideas, well kinda. haha. But, my shopping list doesn’t have much crossed off. 34 days?!?! Shit just got real when I received this little reminder email here.
Hope you all guzzle wine over pizza tonight and have a fab weekend. I plan to relax to the maximum and enjoy my not-so busy weekend. It’s probably the last one I’ll get till after the new year.
