This statement is tried and true. If I eat crap, I feel like crap. It is what it is. I remind myself daily. This is why I’m dedicating this week to skinny, but delicious recipes. I made our meal plan around my favorite Skinny Taste recipes.

Here’s what I’ve got cookin’ in our kitchen this week:
Did anyone have a chance to check out Nugget Market’s Secret Special this weekend? Angus Beef New York Steaks for $6.99/lb. Great deal. We stocked up. Sign up for Nugget’s emails and you will receive a Secret Special weekly. It’s always a hot deal.

So, Sunday we had streaks…lol. And this organic salad kit I found at Raley’s. I actually got the salad for free from an Extra Friendzy coupon on Raley’s website. Feta, sun-dried tomatoes, roasted chickpeas and greek dressing. Yummm. We always throw down on Sunday nights.


Taco Tuesday with a healthy twist
Turkey Taco Lettuce Wraps (I promise you wont miss the tortilla) + Quick Mexican Brown Rice, both Skinny Taste recipes.
Trader Joes frozen Brown Rice is legit! Saves tons of time too. I will be using this for the quick Mexican brown rice.

Taco toppers – guac + salsa.
I made a batch of Pioneer Women Salsa.

- 1 can (28 Ounce) Whole Tomatoes
- 2 cans (10 Ounce) diced Tomatoes And Green Chilies
- 1/4 cup Chopped Onion
- 1 clove Garlic
- 1 whole Jalapeno, seeded
- 1/4 teaspoon Sugar
- 1/4 teaspoon Salt
- 1/4 teaspoon Ground Cumin
- 1/2 cup Cilantro
- 1/2 Lime


I adore this citrus squeezer. You can find them at Target or here. It’s great for a small batch of lemonade, dressings, mixed drinks and pretty much anytime you need fresh squeezed juice.

Drain tomatoes. Add all ingredients to a large food processor. Pulse 15 times. Refrigerate before serving.
That’s it. I keep these ingredients stocked in my pantry. We go though a batch of this salsa quickly in our house.


Also on the menu are these beauties, Bacon Topped Petite Turkey Meatloaf with BBQ Sauce. Bacon!!!

These petite meatloaves have a hidden ingredient. Zucchini. I always feel so sly when I can add a veggie to a dish and my peeps have no idea. I grabbed a mini loaf pan last week. I was stoked when I found one at World Market at a lower price then Target or Walmart. Score!!!

I will be serving these along side mashed cauliflower and steamed broccoli. My trick to cauliflower mash is adding 1 potato. I know it kinda defeats the purpose, but It helps immensely. The potato helps make a smoother texture. I modify this recipe here. Minus the garlic, using milk and adding a potato.
This fall weather has got me all about the comfort food. Skinny Taste Crock Pot 3-Bean Turkey Chili garnished with red onion + cilantro + cheddar cheese. That’s a no fail combo. You can’t have chili without Skinny Jalapeno Cornbread. Not a Skinny taste recipe, but it is still in the lighter category.
Well, there you have it. Our dinner meal plan for the week. You really can’t go wrong with any of these recipes.
Fall comfort dishes lightened up.
