Pumpkin, of course!

Pumpkin Muffins with a Streusel Topping, to be exact. Add this easy recipe to your Fall To-Do’s. It will be a favorite, I can promise you that!

This is a total semi-homemade recipe. In case you haven’t looked yet, pumpkin puree is kinda like toilet paper in March. Extinct!!! I finally found a couple of can at Trader Joe’s the other day. But, I’m telling you the struggle is real. So, if you want to enjoy ALL THE THINGS PUMPKIN, you may need to buy that shit in a box. Then jazz it up to make it extra delish!

With this recipe, I really wanted to boost up the aesthetics…ha! That feels so funny to say out loud. To keep it real, cupcake liners are kinda ugly? Anyone else agree. So, using a roll of parchment paper, I cut out 5 inch squares. They worked perfectly! Good ol google helped a sister out. I found this square printable. Printed it out, cut it out. And used it as a stencil. I get it, sounds kinda silly. It’s really easy to do and I LOVE the way the muffins turned out.

It is a little tricky till you get the hang of it. Keeping the parchment paper square in the muffin tin is kinda of tricky. Once you get the hang of it, it’s simple. I made 5 dozen muffins using this technique. Once again, went to my trusty friend Google for a visual to share with you…..

How To Make Muffin Liners Out of Parchment Paper

I baked my little heart out last weekend. Then packaged these up for our neighbors and doorbell ditched them on Tuesday – aka the First Day of Fall! With a tag that read: “Happy Fall Y’all”

One of my neighbors was so taken aback by the gesture. Every time I see him he yells ” Happy Fall Y’all!” and tells me what a great day we made Tuesday. Haha – for reals. Crazy that such a simple thing, can really have an affect on people. Ya know?

I’ll be sharing the cute tags + containers and everything at the bottom of this post.

I used Trader Joe’s mix. You can find Pumpkin bread or muffin mix at any grocery store. The KEYYYY is the in topping!

  • Servings: 12

Here’s what you’ll need:

  • Trader Joe’s Pumpkin Muffin Mix (Pillsbury + Libby’s will work too)
  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup butter, melted
  • 1 1/2 cups flour

Here’s what you’ll do:

Cut out your 5 inch parchment paper squares. Or say screw it and use cupcake liners.

Mix brown sugar + sugar + cinnamon + salt + butter + flour together. I like to use my hands .

Prepare muffins according to package instructions.

Sprinkle the streusel topping mix over the muffins.

Follow baking directions.

Remove from the oven and immediately (burning your fingers) break the muffin in half + slather with butter. Once it oozes through the whole muffin, then it should be cool enough to devour!
