It’s Taco Tuesday friends!  Other than Friday, Tuesday is a pretty close runner-up to a favorite day of the week.  The Taco part.  Not the Tuesday part.

Who doesn’t love Taco Tuesday?

You guys, stop what you’re doing and read these easy recipes to take your Taco Tuesday from the same ol thang to WOW, that was bomb.com.  Ha.

 

This salsa is from my homegril Lisa at Salty Lashes.  She doesn’t know we’re homegirls yet.  I’ve made a few of her recipes and they are always easy, fresh and yumm.

Tomatillo Salsa //

Here’s what you’ll need:

  • 1 bunch cilantro
  • 8 tomatillos, cut into quarters
  • 2 green heirloom tomatoes, cut into quarters
  • 2 cloves garlic
  • 1 jalapeno, seeded removed + chopped
  • 3 limes, juices
  • 1 white onion, chopped
  • 1 teaspoon salt

Here’s what you do:

Grab the food processor.

Throw all the ingredients in and blend till smooth.

Add a little more salt if needed.

Pop in the fridge for a couple of hours.  Better if you can leave it overnight.

Try not to smother every single meal for the next week in this delish salsa.  Dare you!

And for the one that I’ve had lots of requests for….

You are not going to believe me when I tell you how easy this one is.

Crispy Cheese Taco Shells //

Here’s what you’ll need:

  • 8 oz pre-shredded sharp cheddar cheese

Yep, that’s it!

 

Here’s what you’ll do:

Preheat oven to 375 degrees.

Line 2 baking sheets with parchment paper.

Dig through your bowls and find one that is about 6 inches.  Trace it onto the parchment paper.

Measure 1/3 cup shredded cheese and place in the traced circle.  Spread it out.

Place one pan on the lower rack and the other on the upper rack of the oven.

Bake for 5 minutes and swap pans from lower to upper/ upper to lower.

Bake 5-10 minutes.  Watching for little holes to appear on the cheese and the edges will begin to brown.

Remove from oven.  Gently remove with a spatula and drape over a wooden spoon suspended by two glasses.  Check out the image.  The description sounds funny.

Cool and stuff with your families favorite taco meat + toppings.  It’s the perfect low carb taco holder.

Look at those tacos.  Makes my mouth water!

These could be made into cups using muffin tins.  Or how about tostada shells, by just leaving them flat.  How about jazzing them up with some herbs?  The options are endless.
