We made it! It’s Friday! And is it just me, or is today perfect beer drinking weather? Cheers to the weekend!!!
First, I’ve got 5 things on my mind…….
ONE – Circle Beach Towel // I’ve been on the hunt for an affordable beach roundie for far too long. I originally fell in love with The Beach People Towels at Nordy’s. $110 for a beach towel? Nahh! My homegirl (not really) at Living In Yellow posted this super cute, super in-expensive version from American Eagle last week. Shit you not, I paid $11 + free shipping for this beauty. The towel not the kid 🙂 I’m obsessed with tie-dye and the hot pink tassel trim doesn’t hurt either. This color is sold out, but the pink tie-dye with yellow tassels is equally as good! And it’s currently full price….boo! $19 is still a damn good deal considering I’ve done my roundie research and this is the lowest I’ve ever seem them.
I can already picture us kickin it at Pope Beach with our roundie this summer!!!
AEO TIE-DYE CIRCLE BEACH TOWEL
TWO – Pineapple Pizzas // Or do I call them Mini Hawaiian Pizzas? Either way, this pizza will knock your socks off. I saw this on Cooking Light instagram this week and thought, interesting. Then last night, as I was enjoying a Rold Gold Pretzel dinner…..I realized that I had all the ingredients to make this pizza. Leftover ham from Easter for dayyysss. Can of pineapple slices (it’s one of the ONLY fruits that I kinda like). Mozzarella cheese. And sauce. I was so impressed with the finished product that I had my baby daddy try it to make sure I wasn’t loosing my fucking mind. He agreed! His response “you better put this on that blog thingy that you do.” Haha!
Here’s what you’ll need:
- large can of pineapple slices (I’m sure fresh would be great)
- 1 teaspoon olive oil
- 1 teaspoon butter
- 8 slices of ham (Canadian bacon would be killer)
- 1/2 cup thinly sliced red onion
- 1 cup shredded mozzarella cheese
- 1/2 cup pizza sauce
- sliced black olives
- 3 tablespoons basil, chopped
- 1 teaspoon crushed red pepper flakes
Here’s what you do:
Heat a grill pan over medium-high. Coat liberally with non-stick cooking spray. Place pineapple slices on grill pan and cook for 3 minutes on each side. Transfer to a lined baking sheet.
Heat olive oil + butter in a pan over medium heat. Add onion and cook untill browned and sticking to the pan. About 10-15 minutes.
Top each pineapple slice in this order:
1 tablespoon mozzarella cheese
Slice of ham
1 tablespoon pizza sauce
1 tablespoon mozzarella cheese
Caramelized onion
Olives
Broil on High for 5 minutes. Watching carefully so they don’t burn.
Sprinkle with chopped basil + crushed red pepper flakes.
Try not to eat 6 slices, like I did 🙂
So So Good. I’m a major pizza girl and I have to admit, I impressed my damn self with these mini pizzas!!
THREE – Spring Show // Bay and I wrote her 2017 Buyers Letter this week. Then it dawned on me that Spring Show is TWO weeks away. Exactly 14 days! Holy shit. Barbecue is right on track at a whoppin 245 lbs. (as of last week) He is Some Pig! Ha. Bay has worked her little butt off feeding, cleaning and walking Barbecue since January. Not only that, she has paid 100% out of her own pocket this year. Pig + feed + shavings + vaccinations. You better believe she’s also kept track of every penny too. Last year, her first year, we footed the bill. I love seeing how proud she is. Investing her own money in this project has made the experience a little different this year. It’s crazy to think it’s almost over. Sorry, I’m getting all sappy!
