Holy sheet pan. Taco Tuesday was a hit this week. Super good. Healthy. Easy. Not to mention, clean up was a breeze! Everything on one pan is my jam!
Perfect weeknight 30 minute meal.
Here’s what you’ll need:
- 2 boneless skinless chicken breasts, sliced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tablespoons olive oil
- 1 lime, juiced
- 3 tablespoons taco seasoning (or homemade)
Taco seasoning:
- 1 1/4 cup chili powder
- 2 tablespoons garlic powder
- 2 tablespoons onion powder
- 2 tablespoons crushed red pepper flakes
- 2 tablespoons dried oregano
- 4 tablespoons paprika
- 1/2 cup cumin
- 1/3 cup pepper
*This recipe makes a shit ton. Totally halve the recipe or save the extras for next taco Tuesday.
Here’s what you’ll do:
Preheat over to 400 degrees.
Combine chicken + onion + peppers + olive oil + taco seasoning in a large bowl. Using your hands mix until evenly coated with seasoning.
Place on a baking sheet or pan.
Roast for 25 minutes, stirring once halfway through.
Top with lime juice.
Serve over brown rice. In a tortilla. Over a green salad. Stuffed in a quesadilla (Bay’s fave) The options are endless. I served ours with OLE xtreme wellness tortillas. (sugar-free) + homemade guac + TJ’s brown rice.
