Blueberry breakfast heaven! Promise!
My girl is a Starbucks blueberry muffin lover. She’d eat one every single day and never complain. I have to admit, they are pretty delicious. Well, this is just that….it’s like a giant Starbucks blueberry muffin cake.
Last weekend Bailey had her bestie Ruby for a sleepover. So, I woke up extra early Sunday morning to whip this up for them. I figured it was only appropriate to treat the girls to a proper breakfast, right?
Lets be real, I was craving carbs and sugar. I made it for myself! Damn it, what is wrong with me?!?! Just give me the carbs and nobody gets hurt…lol.
Anyway, I knew Bay would wake up to the smell of blueberry cake in the oven. Annnnddd, I was right!
Is it just me, or does buttermilk turn baked goods into gold?!?!
Here’s what you’ll need:
- 1/2 cup butter, room temperature
- 1 teaspoons lemon zest
- 1 cup + 1 tablespoon sugar for sprinkling
- 1 egg, room temperature
- 1 teaspoon vanilla
- 2 cups flour (set aside ¼ cup to toss with the blueberries)
- 2 teaspoons baking powder
- 1 teaspoon salt
- 2 cups fresh blueberries
- 1/2 cup buttermilk
I N S T R U C T I O N S:
Preheat the oven to 350.
Cream butter + lemon zest + 1 cup of the sugar until light and fluffy.
Add egg + vanilla, beat until combined.
In a bowl, toss the blueberries with ¼ cup of flour and set aside.
Whisk together the remaining flour + baking powder + salt.
Add the flour mixture to the batter a little at a time. Alternating with the buttermilk.
Gently fold in the blueberries.
Butter a 9-inch square baking pan. Spread batter into pan (it will be very thick)
Sprinkle batter with remaining tablespoon of sugar.
Bake for 35 to 45 minutes. Check with a toothpick for doneness.
Let cool at least 15 minutes before serving.

This cake is beyond easy and it goes soooo well with a cup of coffee. Make this for your peeps Thanksgiving morning. Or Christmas morning. Or better yet, tomorrow morning 🙂
