So, I have this kid that loooovveesss steak. Me, not so much. I mean, it’s good just not my favorite. I rarely use red meat. I stick to pork, turkey and chicken for the most part. Finding a way to incorporate a healthy-ish steak recipe was on my agenda. And let me tell you, this fit the bill!

Anytime you can sneak veggies (these weren’t all that sneaky) it’s a win!! I selected some of Bay’s favorites. Zucchini + carrots + bell pepper. Green onions for the flavor and color.
This recipe does have a few steps, so be prepared. It is a little more time intensive with making the glaze and chopping veggies.
The end result – worth it!!
Here’s what you’ll need:
- 2 lbs (8-10 slices) sirloin steak
- steak seasoning (I used bone suckin’ sauce seasoning)
- 1 tablespoon olive oil
- 1 carrot, chopped into matchsticks
- 1 bell pepper, chopped into matchsticks
- 1 zucchini, chopped into matchsticks
- 10 green onions
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 2 teaspoons butter
- 2 tablespoons shallots, minced
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1/4 cup beef broth
Instructions:
Prepare steak – I found sirloin steaks pre-sliced. Or ask your butcher. Season steak generously with steak seasoning + salt + pepper.
Balsamic glaze – Melt butter in a large pan over medium heat. Add shallots and sautee for about 2 minutes. Add balsamic vinegar + brown sugar + beef stock. Allow sauce to come to a boil and reduce. It will become thick almost a syrup consistency. Transfer to a bowl and set aside.
Chopping veggies into matchsticks is the most time-consuming part of this recipe.

In the same pan (no need to wash) over medium heat, add olive oil + garlic. Turn heat up to high and toss carrots + bell pepper + zucchini + Italian seasoning in pan and stir fry veggies for about 3 minutes. Remove veggies from heat and allow to cool.
To assemble steak roll-ups – Lay out all the steak slices and distribute cooked veggies + green onions. Roll up and place seam side down. Or secure with a toothpick.



Heat your grill pan or BBQ to medium-high. Add a touch of oil to grill pan or place on BBQ. Carefully turn steak roll-up to evenly cook on all sides. Cook until desired done-ness.

Serve over rice or mashed potatoes and top with balsamic glaze.
