The weekend struggle is real.  But, I vow to get my weekends in check starting this weekend.  I mean, you can’t expect me to eat rabbit food and lemon water in Vegas, right?  I don’t even think they serve it?

Weekdays are so much easier.  I go to work.  I eat what I pack.  That’s it!  I don’t have wine or tortilla chips begging me to consume them.  My portion control is on point.  No one extra bites.  And I drink enough water to fill a kiddie pool.  No joke.

This week I had NO time to meal prep.  Vegas got the best of me!  I just had to swing it.  And keep it as clean as possible.  Remember I can eat the same thing for about 4 days without getting sick of it, which makes things pretty simple.

Both of these lunches are Kaia friendly too!!

Taco Salad Mason Jar //

The ever so simple taco salad mason jar.  It’s self-explanatory.

Mix salsa with a little greek yogurt and add first to keep everything from getting soggy.

Then layer salad toppings:

  • halved cherry tomatoes
  • quartered cucumber slices
  • green onion
  • cilantro
  • black beans
  • ground turkey (seasoned with cumin + cayenne + onion + garlic + chili powder)
  • romaine (packed)
  • sliced avocado on the very top

I made two of these for the week and they are always so yummy come lunch time.   It would be good with chicken and any variety of veggies.  The options are endless!

 

Tuna Egg Boats //

This was a new one for me.  My Healthy Happy Home posted them on IG last week and they caught my eye.  I love hard-boiled eggs and I love tuna.  Win Win!!  I changed it up just a little from her original recipe since I had no dill in my pantry.

  • 1 can solid white tuna in water
  • 2 hard-boiled egg yolks
  • 10 hard-boiled egg whites
  • 2 tablespoons Dijon mustard
  • green onion
  • juice from 1 lemon
  • pepper

Mix ingredients and stuff in egg whites.  Voila you have tuna egg boats.

I served mine over greens + cherry tomatoes + cucumber and lemon.  So so good.

Notice the rubber band?  That cute little compartment leaks 🙁  So this helps it stay closed and ensures that ranch doesn’t get on everything.  It’s happened before.  It was a catastrophe, let me tell ya.  You’d think she would have been fine, considering she smothers ranch on everything anyway…lol.

 

I’m dying to get my hands on a OmieBox.  They are currently SOLD OUT everywhere.  I pre-ordered one weeks ago and they say it won’t ship till December.  DECEMBER!!

 

It will be perfect for winter lunches.  My girl is a soup freak.  See that little yellowy-orange half circle in the center?  It’s vacuum insulated, airtight bowl to keep lunches at the perfect temperature.  While everything else in the other compartments stay cool.  YESSSS!  The reviews are amazing.  The price tag, not so much.  It’s $39.50 plus tax.  I will keep you posted when it FINALLLLLY arrives.

 

Here’s to cleaning up my damn weekend act and sticking to a semi clean diet and not pretending like I’m playing a role on the movie Hangover 🙂
