Good morning + happy Monday.  I’m a total Monday + morning person, and I’m totally not feelin it this morning.  I need one more day!!

We had a pretty low key weekend.  It was nice.  My DVR is clear…..not a single show to watch.  That kinda explains how I spent a hunk of my time…lol.

I also watched The Intern.  Gotta love movies with happy endings.  Robert De Niro is such a great actor.

Starting a new job can be a difficult challenge, especially if you’re already retired. Looking to get back into the game, 70-year-old widower Ben Whittaker (Robert De Niro) seizes the opportunity to become a senior intern at an online fashion site. Ben soon becomes popular with his younger co-workers, including Jules Ostin (Anne Hathaway), the boss and founder of the company. Whittaker’s charm, wisdom and sense of humor help him develop a special bond and growing friendship with Jules.

Weekend breakfast // egg whites + spinach + salsa + avocado have been my jam lately.  I stick to smoothies during the week to save time, so the weekends are a treat.  I had my first blood orange and I’m hooked.  Remember – I dont do much fruit, so when I find one I like, it’s a big deal.

Saturday morning my mom and I went on a long walk + chat.  I love starting my day this way.

Cash turned 2.  He just loves Bailey – it’s so cute.  They rode the Patty pony and had such a great time.  IMG_0504.JPG

Saturday night, Cory + I headed to Sac for dinner.  Just the two of us.  I convinced him to stop at Arden so I could do a J.Crew return.  Of course we ended up shopping for a couple hours.  Not many men like to shop like Cory does, so I embrace it.  And take dressing room selfies

When is the last time you shopped at Banana Republic?  It’s been forever for me.  I was impressed.  I even scored a couple tops.  Thanks Cory 🙂

We enjoyed a great dinner at Bandera.  Since I’m still wine free, I ordered a martini.  It was great, but holy shit – you only need one.  I had their famous roast chicken.  Since I’d never tried it.  It lived up to the hype, it was the best roast chicken I’ve ever had.

Sunday was another lazy morning.  More DVR 🙂

I managed to get some food/meal prep done too.  Like these broccoli tots.  I live in a broccoli + potato loving house.  Tater tots go with everything, if you asked Bailey + Cory.  So I did a healthy spin on a house favorite.

Here’s what you’ll need:

  • 2 cups broccoli, chopped and steamed
  • 1 small shallot, minced
  • 2/3 cup shredded cheddar cheese
  • 1/2 cup panko bread crumbs
  • 2 eggs
  • salt + pepper
 

  1. Preheat your oven to 400ºF.
  2. Line your baking sheet with a silicone baking mat (if you don’t own one, I highly recommend you get one asap.  They make baking + clean up a breeze.  I recently purchased this one and adore it)
  3. In a large bowl, combine the chopped, steamed broccoli with the rest of your ingredients. Mix until totally combined.
  4. Scoop a large spoonful of the mixture in your hands, and shape it so it resembles a tater tot. Place on your baking sheet, and repeat until all mixture has been used.
  5. Bake in the oven for 20 minutes, and enjoy warm from the oven.

Lots of yard work + flowers got planted too.  I always feel so accomplished after getting the yard looking nice and tidy.

We had Togo’s #24.  I cant remember the last time I had a sandwich.  Trying to stay gluten free makes it close to impossible.  So damn good.  Bandera + Togo’s always make me think of Zebra.  I enjoyed her two favs this weekend.

Bailey walked Babe for the first time Sunday afternoon.  Babe gave her a run for her money.  She would dart off running and Bailey had a hell of a time getting her back in the barn.  I laugh now, but I did feel a little bad for her.

ps – did you notice that Bailey got a haircut.  I convinced her to chop off 2 inches.  It looks so cute + healthy.

Sunday evening we celebrated McKenna’s 10th birthday.  They girls did a cakepop challenge.  Yellow cake mix with chocolate chips….wow.  McKenna totally won with that recipe.  #cakepopsfordays

And that’s all she wrote.  Friends + family + shopping + DVR + yummy food.  What more can a girl ask for?  It was perfectly nice and relaxing, just as I’d hoped.

Then I got an ass beating at Kaia this morning – it was the hardest workouts this CORE so far.  I could have rung out my clothes when I got home.  Hurts so good!!
