Anyone else crazy about the Spring-like weekend we just had. I wanted to be outside and in the sunshine as much as possible. It gave me spring fever. I’m ready to plant my impatiens flower garden and spruce up the front yard. Possibly dust of my laying out lounge? I sure hope so.
Saturday I prepped for my BFF’s couple shower. Lots of yummy food..
Stuffed Mushrooms. I think peeps only invite me places to bring the mushrooms…lol.
I get asked for the recipe every time I make them. Honestly I do not have a recipe. It’s pretty easy though, so here ya go!
Here’s what you’ll need:
- plastic produce bag full of mushrooms (small ones work best)
- 2 packages cream cheese, softened
- 1 cup parmesan cheese
- handful chopped green onion
- bacon (cooked + crumbled) or the easy way, bag of real bacon pieces
- salt + pepper
Pop the steams off the mushrooms and discard. Using a melon baller, scoop out the gills to make extra room for filling. Rinse mushrooms and let drain on a towel for a few hours. In the meantime, mix softened cream cheese + 1/2 cup parm + green onion + bacon + salt + pepper. Stuff mushrooms with mixture. Sprinkle with remaining 1/2 cup parm. Bake at 350 degrees for 25 minutes, until browned and bubbly.
You can sub sausage for the bacon. Use pesto in lieu of meat. Really, the options are endless. I’ve never met a stuffed mushroom I didn’t love.
Can you believe we wore the same color + similar shoes? What are the odds? Love this girl. We’ve been friends since high school. She’s moved and traveled all over, but we’ve never lost touch. I cant wait to be her maid of honor and watch her walk down the isle in April to marry the love of her life.

For dessert we served Cookie Company Cookies. They are the best cookies in town. Alongside them I made ombre dipped strawberries. And guess what? They are healthy!! Say whatttt?
They are dipped in greek yogurt. You heard me right. Greek Yogurt. Not Chocolate. No offense chocolate, you’re bomb too.
Here’s what you’ll need:
- 1 lb Strawberries (long stemmed look prettier)
- 22. oz Greek Yogurt
- Red gel food coloring
Divide yogurt in four bowls. One bowl NO food coloring. One bowl with 3 small squeezes of coloring. One bowl with 6 small squeezes of coloring. Last bowl with 10 small squeezes of coloring. Mix well and dip berries. Place berries on a lined cookie sheet. I recently bought this silicone baking mat and it’s great, highly recommend and it’s cheap.
Freeze dipped berries for one hour. Then re-dip each berry into the same colored yogurt as before. Freeze for at least one hour or until ready to serve.

Valentines day was perfection. We started our day with a morning couple massage at Cache Creek Casino. It was hands down the best massage I’ve ever had. I wanted to give the masseuse a high five a few times. Check out our room…..

Then we hit the casino for bloody marys for me + black jack for Cory.
Valentines dinner was equally as great. I sat across the table from my two valentines. Cory made reservations at our favorite, Kitchen 428. I had the stuffed salmon: pan seared organic salmon stuffed with wild caught Gulf prawns, sundried tomatoes and mushrooms with an asiago cream sauce. Cory had the lamb shank. Bailey the chicken + fries, of course. Dinner was fab. We topped it off with a slice of cheesecake. OMG – crazy good.
I didn’t get a good pic, but I wore my heart top again. I got lots of questions last time I rocked it, so here ya go 🙂
Cory gave Bailey a single rose. She felt so special. I on the other hand, blew it. Each Valentines day, I give Bailey a new pair of Rainbow flip flops. Once March hits, we are flip flop girls all through summer. (I’m actually wearing mine today). I handed her the delivery box from Nordstrom. She opened it and look confused. I accidentally bought her a baby 3/4 instead of a girls size 3/4. She thought they were for her American Girl doll, that’s how small they were. FAIL. We’ve re-ordered and she should be good to go this week.
Sorry for the late blog post. Sunday I just didnt have it in me to sit at the computer. I watched Kardashians and went to bed at 8pm instead 🙂 It was the perfect ending to my weekend. Then back up bright + early for the first CORE workout of the year this morning. It was a good one too. So many new faces. It’s going to be a great 5 weeks!!
