Basically it’s STILL not Friday. This week is kicking my ass. Kid shit. Appointments. Work. Errands. Life. Kaia! Ha! Sorry if I’ve been a complainer. Next week will be SO.MUCH.BETTER! Been trying to stay off the chard, but today, today I may just make a little exception. I’m with Pooh. “let’s go smash a few bottles”
After this mornings Kaia BRIK Challenge, I’m starving. So, let’s chat about food! Sound good? Okay, good!
I dig a big green salad with dinner. Bailey, on the other-hand, does NOT. Unless I use iceberg. For some reason, I’ve been anti iceberg. Typically I grab mix greens, arugula or romaine (staying away from that shit). Never iceberg. So, I saw this recipe floating over the internet and though, hummm. That looks killer.
Thank you Barefoot Contessa for continually making easy + fresh recipes that the whole house loves. Without fail, every single Ina Garten recipe I’ve ever attempted has been fantastic!
Here’s what you’ll need:
- 5 oz blue cheese crumbles, divided
- 1/3 cup mayonnaise
- 1/3 cup greek yogurt
- 1 tablespoon red wine vinegar
- pinch of sugar
- salt + pepper
- 3 celery stalks, thinly sliced
- 4 radishes, thinly sliced
- 4 green onions, white + green parts thinly sliced
- 1 head iceberg lettuce
- 2 slices bacon, crumbled (optional)
For the dressing:
Place 1/2 of the container of blue cheese crumbles in bowl and microwave for 15 seconds, or until it begins to melt. If you don’t own a microwave, like myself, the stove top works too!!
Into a food processor add mayo + greek yogurt + red wine vinegar + sugar + salt + pepper + melted blue cheese. Process until smooth. Place in the refrigerator until ready to serve.
For the salad:
Combine celery + radishes + green onions in a bowl.
Trim the stem off the lettuce. Cut in half. Gently pull 3 leaves at a time keeping in round cup shapes. Sounds weird. Or cut in wedges, that would be easier.
Spoon dressing over iceberg lettuce cups. Sprinkle with salt + pepper.
Top with veggie mixture.
Distribute remaining blue cheese crumbles + bacon crumbles.
The verdict: Bay polished off her salad first. She loved it. And asked me to make it again the following evening. For the record, Bay doesn’t like green onions + radishes or blue cheese….LOL! I win! I win! Don’t you love it when that happens?
And you guys, iceberg isn’t that bad. Like at all. To be honest, I really enjoyed it. It’s got that crunch that I almost forgot about! Even added it to the grocery list for this week too.
