{weekend notes}

Not only is today Monday….It’s HELL WEEK Monday.  The struggle is real friends!  When You contemplate faking an injury so you can quit….that’s when you know it’s HELL WEEK.  I swear, I only thought about it once….when it was time for the second run.  I survived and will be making today a double day…YIKES!

My weekend started off with a mellow Friday night at home.

Or at least I thought.  Then my girl, Nikki showed up with a bottle of wine and her own glass from home. LOL!  Reason #382 why we are friends!

We skipped Mojo’s Happy Hour for wine and a catch up sesh at my house.  Don’t get me wrong, Jason’s cucumber gin + tonics are to die for, but it was nice to kick it at home and catch up for a change.  Thanks for stopping by B!!!

I only had one glass of wine, from a glass shaped like a life size bottle of wine…lol!

We spent the rest of the weekend in Salinas with the Hostert family ♥

When you’re girlfriends home feels like home, that’s a damn good feeling to have.  Not to mention their house is absolutely gorgeous and totally looks like the Father Of The Bride house.  Don’t you think?  Every time I pull up, I think of that movie and it makes me smile.  FullSizeRender (14).jpg

Pool cheers at Chamisal Tennis Club.  Their tennis club is frickin amazing.  And they serve margaritas by the pitcher at the pool.  SOLD!

Saturday evening we went to the outdoor Forest Theater in Carmel to see The Wizard of Oz.  It was the best play I’ve seen to, to date.

The Forest theater is an intimate outdoor venue situated at the end of a residential neighborhood in Carmel.  As you can probably imagine, It’s beautiful.

Built in 1910, the historic Outdoor Forest Theater is a 540-seat ampitheater located on Mountain View Avenue and Santa Rita Street, in Carmel-by-the-Sea. The stage is framed by towering pines and huge open fireplaces, providing a majestic backdrop for the plays and musicals presented by Pacific Repertory Theatre. Every August and September, PacRep presents an annual family musical, followed by the annual Carmel Shakespeare Festival.

Outside food + drink isn’t only welcome, it’s encouraged.  Yes, that includes wine!  Carmel know’s what’s up!  I saw some of the most fabulous cheese tray displays I’ve ever seen.

Hi guys!!

Carmel’s own unique version of “Oz” had all our favorite flying (yes, flying) witches and all the classic songs.  The special effects were bad ass!

We were blown away from the moment the tornado touches down and lands in Oz.  This show was complete with munchkins and flying monkeys.  They didn’t skip a beat!

For the record, I only dozed off once!

Sunday morning donuts + hot cocoa for the kids.

We hit up El Charrito for BOMB.COM breakfast burritos.  I only wish, that some day Woodland get’s an El Charrito too.  This would be my #2 reason to move to Salinas.  Obvi #1 would be Nicole.

They make homemade tortillas everyday too.  Like they still have a little dust of flour on them when you take a bite of the burrito.  Yumm!  You order on-line and pick all your toppings, salsa and meat.  Dang, my mouth is watering just telling you about it. Haha.

Couple selfies before we headed home.  Reagan LOVES selfies.  Every time I asked her if she wanted to take one, she’d starting laughing out load.  God she’s cute!!

Sunday evening we celebrated my Mom’s Birthday!

I made her/our traditional birthday mocha almond ice cream pie.  We get this about 3 times a year.  My birthday, Bay’s birthday and my Mom’s birthday.

It’s also probably the easiest birthday cake ever too!

  • Graham cracker crust (deep dish)
  • Sliced almonds
  • Hershey’s Hot Fudge
  • Dreyer’s Mocha Almond Fudge Ice Cream+

 

Heat (in jar with lid removed) hot fudge for 30 seconds.  Spread 1/2 of jar all over the graham cracker crust.  Pop in the freezer till hardens.  About 20 minutes.  Pull ice cream out of the freezer to soften.

Spread entire tub of ice cream into the fudge covered crust.  Yes, the whole damn thing.  Pop it back in the freezer for about 30 minutes.

Heat up the remaining hot fudge in the microwave for 30 second.  Pour fudge over the ice cream and top with almonds.  Back in the freezer till ready to serve.

Would ya look at that!  Pure mocha almond fudge love right there.

I still have 1/2 of this in my freezer and have been day dreaming about it off and on all day.  This could be dangerous.
