{overnight oats}

Never in my lifetime would I think overnight oats sounded good.  Until now.  Finally got sick of my go-to protein smoothie.  I’ve only had it for the last 8 weeks, almost every single morning.  Egg whites, ehh.  Still enjoy them, but I really just needed something new + healthy to throw in the rotation.  Grab + go is a HUGE plus.  And the fact that I can pre-make a few of these bad boys on the weekend to store in the fridge.  I caved and decided to give it a try.  Long story short.  Much to my surprise….I LOVED it!!

Kaia Friendly, gluten-free, clean, low fat, low cal, high protein.  What more can a girl ask for?

Banana Bread Overnight Protein Oats

Here’s what you’ll need:

  • ¼ cup old-fashioned oats (gluten-free)
  • ½ cup plain nonfat Greek yogurt
  • ¼ cup mashed banana (1 small banana)
  • ⅛ teaspoon ground cinnamon
  • 12 drops vanilla creme stevia (I left this out)
  • 1 tablespoon chopped walnuts

Add cinnamon to mashed banana.  To a mason jar or plastic container, add oats + yogurt + banana with cinnamon.  Stir until ingredients are fully combined.  Cover and refrigerate 8 hours or overnight.

Overnight oats are meant to be eaten cold, straight from the refrigerator! No need to heat them up.  When ready to enjoy, give a good stir and top with chopped walnuts.  Grab and go!!

After 24 hours, the banana will start to turn brown.  That’s perfectly fine.  The flavor will not be affected.  Store in airtight containers in the refrigerator for up to 4 days.
