I’m sure you’ve all noticed that shits about to get real here next week. Recipes with tons of green + soups + smoothies + salads. I will only post my tried and truly good ones, promise! But, since it is almost the new year and I love my xoxo stacyb readers….I’m going to share two of my favorite secret bomb.com recipes. Or maybe it’s because I wanted a reason to make them and indulge before next week? I’m not telling 🙂
Without further ado….
GG’s Blackberry Cobbler + Buffalo Chicken Sliders
I’m warning you now. These are certainly NOT Kaia friendly. These are certainly not anything friendly, except your family + friends will love you for sharing.
Think butter, lots of butter!!
GG’s Blackberry Cobbler
Here’s what you’ll need:
- 4 cups blackberries
- 1 /2 cup (1 stick) butter
- 1 1/2 cups sugar
- 1 1/2 cups flour
- 1 cup milk
- 3 teaspoons baking powder
- 1/2 teaspoon cinnamon
- extra sugar for dusting
Place stick of butter (everything’s better with butter – in my best Paul Deen voice) in your baking dish. Place dish in oven and preheat to 350 degrees. The butter will melt while the oven preheats. Once butter in melted, remove from oven and allow to cool + harden. This takes about 15 minutes. In a large bowl mix sugar + flour + milk + baking powder and pour batter on top of the butter. Place berries over batter. Sprinkle with cinnamon + extra sugar (told you it’s bad). Pop in the oven for 50 minutes.
Serve warm with vanilla bean ice cream. It’s bomb.com ya’ll.
*fresh or frozen blackberries work equally well.
Buffalo Chicken Sliders
Here’s what you’ll need:
- one Costco rotisserie chicken, shredded (it makes my life easy)
- slider buns (my fav are mini ciabatta rolls)
- 6 tablespoons butter
- 1 cup Franks hot sauce (don’t even try anything else)
- 1/2 cup honey (Seka Hills is amazing)
- 1/4 cup white vinegar
- 1/2 teaspoon pepper
- 1 teaspoon salt
For the spread:
- 1 cup sour cream
- 1/2 cup crumbled blue cheese
- 2 tablespoons vinegar
- 5 chopped green onions
- salt + pepper
Mix all spread ingredients in a tupperware. I like to make my spread first and stick it in the fridge to let the flavors marry, I like that term:)
Next, melt butter in your pan. Add Franks + honey + 4 tablespoons vinegar + salt + pepper. Bring to a bubble over medium heat. Add the chicken and cook till heated through. Drain chicken.
I like my buns toasty. I spread a little butter and stick them in the oven for a couple of minutes. Assemble sliders. Buns + spread + chicken…in that order and voila!!
