{weekend notes}

In case no one told you today:

And don’t skip your Monday workout.

This morning was so weird. Bay stayed the night at a friends house. I realized that we no longer have zero period drop off. Which means I get 30 extra minutes each morning. THIRTY minutes is life-changing. Especially in the mornings. And I haven’t seen my kiddo since Friday morning. I cannot wait to squeeze her this evening.

Intentions for the Week:

  • Find the perfect dress for Summerland 2019
  • Lunch date with my calendar
  • Work on a fun + festive 4th of July treat
  • Catch up on laundry
  • Spend some q-time with Bay
  • Practice on a lemon granita
  • Sit at the pool in the evenings
  • J.Crew Factory Try-on
  • Write a recipe for my Greek Burgers
  • Use the WW app like it’s my day job
  • Make my {homemade pesto}
  • Set a pretty red, white + blue table

This week on the xoxostacyb: Target Tuesday, since I found so much cute shit at my last trip. Can’t decide if I’ll share my crunch wrap recipe or my sheet pan salmon dinner? We’ll see! And lastly – fun dresses under $50 for summer parties + graduations + weddings.

Highlights from the weekend….

Week three of I Heart Macros love your body challenge. That workout was really, really hard. But, I’m so happy I completed it.

Friday evening, Cory + I hit the road for a little getaway. He planned it all out and booked everything. Wonder how I can get Bud Light Lime to sponsor me? Lol!

First stop was the Sundial Bridge. If you’re ever passing through Redding, I highly recommend walking across the glass bridge. It’s beautiful!

When you ask Cory if he wants to take a selfie…lol. If you know Cory, then you know he’s not into pictures.

But, we got one!

Wine + dining at Jack’s Grill. A locally owned restaurant that’s been around since the 30’s.

I never knew downtown Redding was so cute!

If you know, you know! Best Western waffles are hands down the BEST! And I don’t even really like waffles!

We left Redding at 9am and headed North. Chasing waterfalls.

First Falls – Burney Falls. I’m going to do a detailed post on all the falls next week. We did the 1.2 mile loop around the falls. Super pretty, but you can totally see the falls without any hiking.

We stopped at Cattle Camp to fish. We even saw the cutest otter. I wish I would have gotten a picture of him. I did a pole on Instagram stories, and it was 50/50 – Would you jump off this rope swing. Me – hell NO!

Mossbrea Falls – Saved the best for last. Cory had never been. This spot knocked his socks off.

Which is ONLY accessible by train tracks. And a train came as we were on the tracks. Kinda creepy, not gonna lie.

Other than two people, we had the falls to ourselves. Last time I visited, there were about 50 other peeps. It was so serene.

We made it to Dunsmuir just in time for the Railroad Days Festival. And as you can imagine – PRIME people watching.

We had the best dinner at Mike & Tony’s in Mt Shasta.

We even ordered dessert. Affogato. We agreed it was the best dessert we’ve had in a long time.

What are the odds my Dad and his fishing group are having dinner at our hotel in Mt Shasta?

May or may not of had a good time.

Sunday morning we checked out Hat Creek for more fishing

Stumbled on a total dive bar in Bartle, CA

The bartender told us all about the Subway cave. This shit is straight up creepy! Think: Really Dark. Really Cold. Really Damp.

Stairway into the cave. If you’re even in the are, you have to check it out.

We stopped at town after town to stretch our legs and check things out.

Found Indian Peak Vineyards in Manton, CA

Ended up at Sierra Nevada Brewing for dinner. This was my first time here.

Pizza was BOMB.COM!

Our final leg home looked like this.

We put on lots of miles, but views like this make it pretty fun.

All good weekends have to come to an end. Hope you all had a great weekend. Here’s to surviving this heat wave.
