It’s time to wrap up the work week and get on with the weekend. I’m ready. The next 3 weekends are nuts, so I plan to relax and enjoy this one. We had a housecleaner come on Monday, shout out to Rosa – she is the shit! This is foreign to me, never had someone clean my house before. Something we also will not do often, but holy cow….I think everyone deserves it a few times a year. My bathrooms have never been so clean. I didn’t have to clean my house this week. It was a dream come true. Bay and I watched movies last night and it was so nice. I’m normally running around dusting, moping and vacuuming every Thursday night.
Anyway, It’s Friday so Im going to share 5 things on my mind today. Cheers to the freakin weekend peeps!!
ONE – Hair envy // I suck at braids. I can’t even braid my own daughter’s hair. It’s sad. Can someone please teach me how to make my hair look like this? I’ll even pay you!!
TWO – Rainbow Salmon Skewers //
I invited the parentals over last weekend for a “Thank you so much for helping me everyday and making my life doable” dinner. You can read more about it here {weekend notes}. This recipe is perfect for a dinner party, since it can be prepped and ready for the grill in advance. Skewers can be time consuming. I’ve had lots of inquires about this recipe. Love when readers email/text telling me they’ve made a recipe for their family and it was a hit. Well, this one is sure to be a hit too. Here’s what you’ll need:
- 2 lbs salmon fillet (ask for thicker pieces)
- 1 each, red + yellow + green bell pepper, cut into 1 1/2 inch pieces
- 1 red onion, cut into 1 1/2 inch chunks
- olive oil (I recommend Seka Hills)
- lemon, quartered
- Mrs.Dash lemon pepper
*Ask your butcher to remove the skin from salmon fillets. You will waste a TON of it trying to do it yourself.
If using wooden skewers, soak in water. Otherwise the heat of the grill will scorch them.
Cube salmon fillets into 1 1/2 inch chunks. Do the same with the peppers and onion. Separating the onion layers once cut.
Using 2 skewers each, thread onion and 1 of each pepper, followed with cubed salmon. Repeat layers beginning and ending each skewer with onion + peppers. Leaving room at the base for easy handling.
Brush filled skewers liberally with olive oil on all sides. Sprinkle with Mrs. Dash (I love Mrs. Dash…they pack lots of flavor)
Cook on hot grill, turning once. Be careful to not overcook, as the fish will cook quickly.
Serve with a squeeze of lemon.
I served my salmon skewers over rice pilaf with grilled asparagus on the side. My parents raved about it. Kinda made my day, I wont lie 🙂 I followed this recipe.
THREE – Pillowfort, an entirely new kids’ home collection available only at Target. The email was packed with adorably girly (and boy too) bedrooms. My imaginations ran wild when I got a glimpse of the 12 whimsical themes, like Tropical Treehouse, Stellar Station and Ocean Oasis, to name a few. Makes me want to re-decorate Bay’s room stat. Pillowfort’s more than 1,200 pieces of furniture, bedding and more (including everything from teepees to felt animal head wall decor!) Bailey swooned over the Modern Mirage + Floral Field. She looked at the images on the web-site in complete awe. Basically how I look at the Pottery Barn catalog. Each room has details that are fun, functional and affordable. Best part – you can scoop them up right at your favorite store. You know, when you run in for the one item and get uber distracted and spend $100 in 5 minutes. FOUR – My girlfriend Sarah gave me these Wine Wipes. “Wipe that wine off your smile.” My four front teeth are veneers, long story – I’m sure I’ll share someday. Not sure if that’s my problem, but my front teeth turn red….like really really red, when I enjoy my beverage of choice. I absolutely refuse to take photos after I’ve been sippin on red-red wine. I was thinking, “Perfect, since I’m going to Seka Hills to pick up my first Club Wine this weekend.” Then I remembered, 23 days left of lent. Wine, just the word makes my heart ache. I cant wait to use these bad boys to keep my whites, white.
