I have a thing for pizza. Any pizza really. Not sure I’ve met a pizza I didn’t like? Sometimes, just sometimes though, I make my own pizza. I have finally mastered the cauliflower pizza. Since there is cauliflower, I’d say we can refer to it as a “healthy” food option, right? I mean minus all the cheese and pepperoni, it’s all veggies anyway 🙂
Cauliflower Pizza
Here’s what you’ll need:
CRUST
- 1 large head cauliflower, cut into florets
- 1/4 cup parmesan cheese
- 1/2 cup almond mozzarella cheese (any cheese does the trick)
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon red pepper flakes
- 2 large eggs, lightly beaten
PIZZA
- 1 1/2 cups pizza sauce
- 1 cup shredded mozzarella cheese (I ran out, so I used cheddar)
- veggies of choice (we used pepperoni and olive this time)
Preheat oven to 450 degrees.
Place cauliflower in food processor and pulse until you get crumbs. Kind of resembles snow. Scoop cauliflower into a microwave safe bowl, cover and cook for 5 minutes. Remove and spread cauliflower on a kitchen towel to cool.
Once cool, wrap cauliflower in the towel and squeeze every last bit of liquid. This takes a few minutes. Place cauliflower in a large bowl and stir in parmesan + mozzarella cheese + seasonings + spices + eggs. Mix until combined.
Place cauliflower dough onto pizza stone or cookie sheet covered in parchment paper. Press dough into a circle, making sure the crust is thin. About 1/4 inch thickness. Bake 10-12 minutes, or until golden brown.
Remove crust and “decorate” with your toppings. I do sauce first, then cheese, topping with veggies and meat last. Then of course, a little more cheese.
Pop pizza back into the oven for about 15 minutes. Until cheese is bubbly.
Cover with extra parmesan and serve immediately 🙂
I have personally tried about 5-6 cauliflower crust pizza recipes and this one is without a doubt the best and easiest. Bailey and I made this on one of our date nights. And to be honest, she pretty much made the whole thing with me being there to read off the next step. We tweaked the recipe from How Sweet It is.
