{turkey pot pie}

Raise your hand if you have leftover turkey coming out your ears!

I’ve got a killer recipe to use up some turkey. Think the ultimate comfort food.

Pot pie.

With a biscuit topping. I may never use a traditional pie crust again.

Look at those cheddar + chive biscuits!!

Here’s what you’ll need:

  • 2 cups leftover turkey, diced
  • 3 tablespoons butter
  • 1 1/2 cups carrots, diced
  • 1 1/2 cups onion, diced
  • 1/2 cup celery, diced
  • 1 1/2 cups red potatoes, diced
  • 1 teaspoon salt
  • 1/4 cup flour
  • 1 1/2 cups chicken stock
  • 3/4 cup milk
  • 1 cup cheddar cheese, shredded

Cheddar + Chive Biscuits:

  • 2 cups Bisquick
  • 2/3 cup milk
  • 1/2 cup cheddar cheese, shredded
  • 4 green onion, chopped
  • cooking spray

Here’s what you do:

Preheat oven to 400 degrees.  Grease a baking dish and set aside.

In a large pan on medium heat, melt butter.  Add carrots + onion + celery + potatoes + 1 teaspoon salt.  Cook veggies until soft.  About 8 minutes.

* I cheated and used a container of TJ’s Mirepoix (mixture of diced carrots + onion + celery)  

Stir in flour and cook for 1 minutes.  Add chicken stock + milk.  Combine well and bring to a boil.  Then reduce to a simmer.  Add turkey and continue to simmer for 5 minutes.

Remove from heat and stir in 1 cup shredded cheese and season with salt + pepper.

Transfer to baking dish.

Cheddar + Chive Biscuits:

In a bowl combine all biscuits ingredients.  Drop dough by rounded tablespoons over the pot pie.

Spray with cooking spray.

Bake for 20 minutes.  Until bubble + biscuits are golden brown.
