I legit debated for at least 30 minutes now about whether or not I should be sharing this recipe today.
Here’s the deal – It’s not that this queso is not delicious – because let’s keep it really real. It is DELICIOUS!!! It’s just that I have been trying really hard to clean up my act, food-wise.
And now that I’ve edited photos + thought about it, I accidentally added all the items to my target drive-up order. FML!
I went back and forth on this issue for waaay to long, but then I decided you all need a little queso in your lives too! Ha!
It’s just the right thing to do.

First off, if you remember this old school crock-pot, then you’re pushing 40 years old too! lol! My Mom has been using this crock-pot my entire life. It was actually a wedding gift my parents received 41 years ago. She been packing this thing around longer than me. Isn’t that nuts? I’ve probably had 3 slow cookers in my 39 years already. They just don’t make them like they used too!
Okay, so read the ingredients really quick. Don’t over thing it, k?
{slow cooker queso}
Here’s what you’ll need:
- 2 (15 oz. cans) mexicorn/southwest corn (corn with peppers)
- 2 (4 oz. cans) cans diced jalapenos
- 2 (4 oz. cans) diced green chilies
- 1 lb (16 oz.) brick monterey jack cheese, shredded (the pre-shredded doesn’t melt as well)
- 1/2 cup shredded parmesan cheese
- 2 (2.25 oz. cans) sliced olives
- 2 cups mayonnaise
Here’s what you do:
Dump everything in the slow cooker. Give it a good stir. Set to low for 4 hours, stirring occasionally and let the slow cooker do all the work.
Then start dippin!
ENJOY!!!
Salty tortilla chips are my jam. How about nachos? Yummm! Veggies work too. Really, you could dip anything in this queso and it will taste like a million bucks? Shit – you could drink it. No judgement here! Ha!!
