{spring break recap}

Reentry is no joke. After a week off from work + school for Spring Break, we are back at it today. Not going to lie, I’m strugglin hard. I’m on my 2nd cup of coffee. And I’ve got an iced coffee in my near future. I walked into my office at 7:45 am this morning and instantly felt at home. There is something to be said about routine. Really, really missed mine. Although we had a fucking blast last week.

Intentions for the Week:

  • Get Timothy + Archie Spring Show ready
  • Eat healthy AF using my WW app
  • Drink a shit-ton of water (I don’t think I’ve had any since April 19th)
  • Start making my bed again (also haven’t made it since April 19th)
  • Clear out email inboxes (one had over 900 emails…FML)
  • Make my favorite {thai coconut curry shrimp}
  • Try a DIY cropped sweatshirt
  • Target Tuesday…share all the things Target
  • Come up with a yummy, yet healthy dessert for my sweet tooth

Kicked off Good Friday with Martini Mama Liz’s famous martinis. Needless to say, we got tips!

{egg roll bowls}

Happy Spring Break! We’re off to the beach for some vitamin Sea. Much needed sand between our toes + sunshine on our shoulders. The thought of not setting a 4:30 am alarm all damn week has be straight up giddy! Ha!

I did get some time last week to pre-blog some content. And this one was highly requested, so here ya go!

I have something to admit….

I didn’t make a real dinner in over 2 weeks. We’ve been so busy, that I just haven’t made the time. Nugget’s salad bar chicken has become a staple in my diet…lol. Bay’s been living on taquitos + corn dogs. And let me tell you, she hasn’t complained once. But, I feel so much better when I make a healthy dinner. And we sit around the table. Say our daily peeks + pits.

I missed it. So last week, I finally made time to cook. We had our first al fresco dinner.

The best part?

I made a zero weight watchers point meal. And we both LOVED it. Added rice to Bay’s because clearly she can use all the carbs.

It’s uber healthy. Uber easy. I’m talking like 10 minutes max. One pan.

Wham bam thank you ma’am!

The grazing board. AKA Charcuterie Platter. Incase you haven’t noticed, they’re kinda my thang. Today I’m sharing my Easter candy board along with two other boards I created. A Char-Kid-Erie Board and an Adult cheese board. But this Easter board just might be one of my faves so far. All the things kids love….which keep their grubby little fingers of the fancy cheese (which we all know they don’t even like anyway) lol!

{easter basket ideas}

I LOVE Easter time. Well, I love all Holidays. We have so many fun Easter traditions, which makes this Holiday so fun. I always fill Bay’s basket with all the things summer time. New swimsuit. Beach towel. Goggles. Cute floatie. I pretty much follow what my parents did when I was a kid. Always a swimsuit and saltwater sandals. Oh and lots of candy. You can’t forget the candy! It’s like a Christmas stocking, but with summer stuff. All the fun little goodies.

I used to be able to post all my goodies here, but now I have a tween that likes to read my blog and look at all my photos. And since I want her to be somewhat surprised, I’m going to save her exact basket for Easter morning. I’m sharing all kinds of ideas. Some are in her basket this year. Some I’ve used in previous years. I even got extra and did a boy basket too!

I try to think of things she’s going to need as summer approaches and Spring break rolls around.

{easter round-up}

Bunny Cookie Cutter | Floral Placemat | Milk Glass Dish

How adorable are these little bunny butt cookies? Bay helped me make them and I LOVE how they turned out. So simple too. We used a sugar cookie package to make these. Because, sometimes….we just don’t have time to whip out the mixer and make a hot mess. lol.

All you need is your fave sugar cookie recipe. Or a packaged mix. A bunny cookie cutter. I found this one on Amazon after searching all the stores in town (with NO luck) and Amzon delivered in 1 day. Well done Amazon, well done. And a cute dab of frosting for a cotton tail.

This is a great cookie to make with little ones. You can’t mess it up. And they take no time at all. Nothing gets you into the Holiday spirit like a cookie baking day anyway.
