After I eat, I immediately start thinking about what I’m going to eat next.  Anyone with me?

Or how about, “I was so busy, I didn’t have time to eat.”  Whatttt?  I’ve also never had this problem.  Even on my busiest days!  My days consistently revolve around my next meal…lol.

So, let’s chat about my second favorite subject (clothing being #1 obvi) FOOD falling closely behind.

I could spend all day talking about a cute top or a beautiful meal I can’t wait to create.  Ha!

Good food, though.

I recently came across 5 new (to me) items, at Trader Joe’s, like always, that I’m obsessed with.

Like, I’ve gone back and bought the same item more than once.  I’m sure you’ve seen these items all over the internet.  TJ’s products tend to break the internet from time to time…lol.

Tahini, Pepita & Apricot Slaw Kit

I’m not typically a bagged salad gal.  Tons of sugar.  Just okay flavor.  And let’s be honest, they are kind of a rip-off.  Each week I grab the big ass tub of mixed greens for about $4-5 and that lasts me all week-long.  Salad kits are a one shot meal.  Get soggy and gross.  But, this one, this one right here, it withstood the test.  Bay wouldn’t touch it with a 10 foot pole…lol.  I feasted on this salad kit at one dinner + 3 lunches.  Never got soggy at all.  I even through the final leftovers on my taco salad.  BOMB!

Roasted Plantain Chips

Up until recently I was a plantain chip virgin.  I always figured they’d be sugary + sweet + banana tasting.  So gross!  That’s what I get for being a judgy bitch.  I couldn’t have been more wrong.  They are so damn good.  I could kill the whole bag in one sitting just like a bag of tortilla chips.  And I’m a tortilla chip gal.  So much, that if I was stranded on a deserted island and could bring 1 snack, I think I’d pick tortilla chips + salsa.  Anyway, they are not a tortilla chip, by any means.  But, they are so good dipped in salsa + guac.  And the only ingredient: plantains.  Talk about real food!

Premium Wild Salmon Burgers

Wild pink salmon from Alaska.  Sounds so fancy, right?  I promise you will open up the little individually wrapped burgers and think…huh?  xoxostacyb is straight trippin.  I also promise that if you bbq these bad boys straight from the freezer.  Top with a dollop of pesto when almost ready.  My homemade pesto is bomb, by the way!  Then serve them over a Caesar salad + on a bun or lettuce wrapped, you’ll understand.  This quick and easy protein-packed burger is a new staple in our home.  Bay LOVES them and I LOVE it!

 

*You can find a box of 4 individually wrapped burgers in the freezer section (aka the dangerous aisle) for $6.49

Cauliflower Gnocchi

Fist off, let’s all say gnocchi together (NYOK-kee).  I feel silly every time I say it.  And I think everybody says it differently.  Ha.  Ok, now raise your hand if you’re down with the cauliflower everything fad?  My hand is up in the air!  Riced.  Mashed.  Pizza crust.  You name it, I’ve tried it.  I’m down with it.  The traditional gnocchi is made up of potatoes.  But potatoes “make you’re butt big”  Joking.  These bad boys are made up of cauliflower translating to NO wheat + sugar + dairy + eggs.  Resulting in fewer carbs + fat + calories.  Hell yes.

The internet give this product mixed reviews.  I believe it’s all in the cooking methods……

Summer is here!  Not officially, we’ve technically got about 20 more days.  But, it sure feels like summer here in Northern California.  To kick-off the summer, Bay + I decided to spruce up the back patio a bit.  We planted lots of new succulents + flowers.  Still working on our herb garden plans.  Moved some of our larger pieces around.  I believe the easiest way to transform a space is to rearrange what you currently have.  Then make a Target run 🙂  Obvi!

I recently read that if you place your patio furniture directly adjacent to the exterior doors, you’ll find yourself using it so much more.  And I have to say, we’ve used our outdoor table so much more.

Then I took it to a whole new level and decided a set table is so much more inviting.  Ha!  It’s just how I roll.

Last week alone, I found myself sipping my coffee.  (wine too).  Doing my daily insta scrolls.  Enjoying dinner.  And soaking up the sunshine in this space.  I love it!

So, remember I mentioned using the shit you have first.  Then making a Target run?  That’s exactly what I did here.

I love linen napkins.  If you’ve been over for brunch or dinner, you know that I ALWAYS use the real thing.  Currently I own probably close to 60 napkins..lol.  My favorite are the Buffet Napkins from World Market.  You can’t beat the price….6 napkins for $10.  I’m also a sucker for white.  Which means spaghetti sauce stains.  I bleach them every.single.time, but eventually there is a stain or two.  So instead of throwing them away, I decided to come up with a way to re-purpose them.  Mind you, these napkins are 100% clean, promise.

I stumbled on a blue Tie Dye kit at Walmart a few weeks ago and it hit me right then and there what I’d do with it.  Tie dye napkins.

Talk about crazy nostalgia.  I remember summers riding our bikes to Harris Park with Sarah + Sheena and tie dying shirts with their Parks and Rec group.  So fun.

{weekend notes}

Welcome back from the long weekend.  Hope yours was sunny + fun-filled + relaxing!

And apparently today is Tuesday, not Monday.  Which I didn’t realize most of this morning.  I’m all thrown off.  Here’s to probably getting it wrong everyday this week 🙂

 

 

Intentions for the week:

  • Wash all the sliders (like really good) (clean windows are everything)
  • Go through Bay’s closet #fuckinggrowthspurt (got rid of more than we kept)
  • List all her clothes on online yardsale (we made over $90..thanks FB friends) 
  • Buy clothes that actually fit her, again! (thank you target clearance section)
  • Set a pretty outdoor table (did you see {tie dye napkin diy})
  • Log all food in My Fitness Pal (totally failed last week)  (Pre-logging is a game changer)
  • Mani + pedi’s for the BIG 6th grade dance  (She picked the prettiest pale pink)
  • Throw together a quinoa salad with shit I already have in the fridge + pantry (bomb.com) 
  • Make more almond butter…yummm (so good on apples + rice cakes + spoonfuls) 
  • Checkout the Before I die wall on Main Street (really cool, check it out)
  • Play at the new park in town
  • Work on our Summer Bucket List (we’re going to have a fun/busy summer)

Memorial Day Weekend always gets me so excited.  The unofficial start of Summer!  Just reminds me of everything that’s right around the corner.  Longer evening.  Sunny days.  Pool days.  Barbecuing.  Cut-off + flip flops.  Lots of cold rosé.  Happy hours.  Family vacations.  Celebrations.  Long weekends.  There is no better way to welcome summer, than to celebrate Memorial Day Weekend.

Weekend plans: Potter Valley Rodeo!  I haven’t been to a rodeo in yearrrsss.  Pretty pumped to dust off my shit kickers.  Some kayaking is on the agenda.  Lots of beer drinking.  And sunshine.  Whatever you do, make it a good one!

 

ONE – Saved By The Max // Did anyone else DIE over the Vanderpump Rules cast at The Max?  Raise your hand if you grew up on Saved By The Bell?  Zack ♥ You guys, I googled that shit.  There is a legit pop-up in West Hollywood.  It’s called Saved By The Max.  ANYONE can go.  It looks just like the Max too!  Kinda like the Museum Of Ice Cream + The Color Factory, but all about Saved By The Bell.  Basically it’s a place to go and get all the cool pictures that are wayyy insta worthy!

$40 a person and you can choose Brunch or Dinner in either The Max or Mr. Belding’s Office.

TWO – Cilantro Vinaigrette //  You will want to put this shit on EVERYTHING!  Swear.  Sandwiches.  Salads.  Over cheese…yum.  Put a dollop over hummus.  Toss with your veggies and roast.  I even added some to ranch dressing.  WOW!  I’m going to marinade chicken in the little bit that I have left.  It’s got a little kick, but Bay didn’t seem to notice.

I’m tell you this stuff is gold.

Here’s what you’ll need:

  • big ass bunch of cilantro (or 2 small ones)
  • 1/2 cup olive oil (still in love with Seka Hills evoo)
  • 2 tablespoons vinegar
  • 1 clove garlic
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes

Toss everything in the food processor.  Blend for about 1 minutes, until everything is nice and smooth.

Pour into a mason jar and pop in the fridge.

{teacher gift}

Have you ever seen a better teacher gift?  I think NOT!  Maybe it’s just the wine-o in me, but I thought this was borderline brilliant.  Just a little something to show the teachers that you appreciate them.  And thank them for your kid being the reason they drink…Ha!

Let’s be real, this would put a big fat smile on my face on the last day of school!

I was so pumped about this cute idea.  Found the perfect ribbon.  My favorite bottle of chard.  Printed out the cute free printable.  Stayed up last night to throw together a couple of these goodies.

Trying my very hardest to be on top of things.  The last 2 weeks of school is always a busy shit show.  You know?

Anyway……

Showed Bay my finished product this morning when she woke up.  Her response….

“My teachers don’t drink alcohol!”

My response….

“Huh?”

Doesn’t drink wine?  Then Bay follows up with….

“Or coffee!”

WTF?

So, I’m back to the drawing board.  Ha!  And I now have two bottles of my fave chard chilling in the fridge for this evening.  Guess it’s not that bad afterall 🙂

But, I’m still a little worried about Bay’s teacher.  What does she pour in her glass after a long hard day?  On to prepare in the morning for another day teaching a bunch of 6th grade punks?  Mrs. DeLemos, you’re making this very difficult…lol.  Only kidding.  Best teacher ever ♥

Bay bakes, again!

Before we get to the cookie recipe, let’s do a quick little Bay update……

 

Spring Show/ 4-H is OVER!  Pig is sold.  Tablesetting is over.  Baking, will contiune in our own kitchen.  Now to complete the Record Book.  In my opinion, the worst ever.

I take that back, we are sitting in on a 4-H county meeting tonight to make up for a missing club meeting.  Think I can sneak wine?  I hear they are boring AF!

Bay was elected the 2018-2019 Willow Oak 4-H Secretary.  She’s so excited.

English horseback riding is the only activity Bay is currently doing.  BIG thanks to Sara for making it happen.  I remember when we had riding + swim team + gymnastics + soccer all at the same time.  WTF was I thinking?  Ha!  #lessonlearned

Filled out all the paperwork for Bay to begin Faith Formation again.  I was never confirmed.  I blame it on Mary Ann though 🙂

Summer camps: Volleyball + algebra academy + ASES.  Along with some babysitting and ditching me to hang with Gram + cousins in Tahoe.

Bay shaved her legs over the weekend.  I sat outside the tub and coached her.  I felt so proud and devastated at the same time.  Where did my hairy legged baby go?

In 16 day, Bay (and I) will no longer be Plainfield Elementary School peeps.  This is a hard one!  We’ve loved this school for seven years.  No more carpool.  No more PTA?  Shit is getting real…let me tell you!

6th grade promotion is also 16 days away (11 school days to be precise)  Thanks for all your instagram story poll votes, Bay picked out her 6th grade promotion dress.

Did I mention there is a 6th grade dance on June 1st at the Community Center?  ONLY 6th graders….No parents allowed.  OMG.  Promotion.  Shaving legs.  And now a dance too?  Dying!  So, in true crazy mama fashion, I ordered Dress #1 + Dress #2 for her to choose between for the dance.  Because, “you can’t wear that same dress to both” according to Bay.  Not sure where she’s heard that shit from?  In my defense, J.Crew is having a killer deal.  All the dresses are marked down 40% + free shipping.

I love a good kimono.  Duster.  Robe.  Whatever the hell you wanna call it.  Let’s just say kimono, it sounds so much more fancy + formal.

Kimono’s are super versatile.  You can dress up a pair of classic jeans + simple tank by throwing on a kimono.  That’s what I was going for here.

They can be worn at the beach or pool as a swimsuit cover-up.  This one’s for you Mama!  My mom and her girlfriends are leaving for Cabo this weekend….and she’s not stuffing me in her suitcase BTW!  I sent her home with some of my faves to take to with her.  And promised to round-up some good finds before she leaves.

And IF I were knocked up.  Which I 100% am not…Ha!  I got hit with about 8 DM’s + messages after posting the picture of GG on Friday night with her great-grand kids.  I laughed though, I think it’s great that you all thought I was one of the 3!  Nope!  Not happening!

It’s Monday friends!  Did anyone else notice that there are ONLY 12 days of school left?  You guys, summer is almost here!  This weekend felt like summer.  The sun was shinning.  We spent as much time as possible outdoors.  Family time.  Spent time with friends.  Good rosé.  Delicious dinners.

{friday 5}

Happy Friday Senoritas!  This week was a doozy.  So tired.  So annoyed.  So grumpy.  For absolutely NO reason at all.  Hence the {floral + herb smudge stick diy}  For the record, it worked!  Feeling 100 again.  Friday might have a little something to do with it?!?!?  Weekend agenda: nada.  Zip.  Zilch.  Nada.  Well, kinda.  We are celebrating GG’s 93rd Birthday tonight, so that’s for sure something.  And the royal wedding…obvi.  Maybe lay out by the pool.  Drink some wine?  Sure, why not.  It’s a weekend dedicated to do what ever the hell we want.  And it happened just when we needed it the most.

Before we part for the weekend, let’s chat about 5 things.  Real quick…..

 

ONE – The Royal Wedding // Who’s getting up at the butt-crack of dawn to watch the Royal Wedding?  I originally said “hell yes,” but the more I think about it….kinda depends on how many cervezas I consume at GG’s fiesta tonight.  Just keepin it real.  DVR is locked and loaded in case I hit snooze.

Then I found this fun drinking game.  Basically, you’d be drunk by 5am if you play during actual time.  Not even sure I’m down with that.  Maybe I’ll play with my cup of coffee + Bailey’s?  Hmmm!  Mimosas?

TWO – Friday Starbucks Date // Back in the day, I’m talking when Bay was around 5 years old, maybe?  We used to do Starbucks dates every Friday morning.  Bay would get the mini vanilla scones, two of them.  I always got a frapp.  Well, last Friday we randomly decided to go to Starbucks at 6am (I skipped the gym, hungover AF)  We ordered drinks + breakfast and sat together and talked about random life shit.  Like the fact she has a crush on this boy….OMG, kill me now!  It was so nice to have a little one-on-one date with my girl.  Before the hectic work/school day begins.  So, we’ve made a pact to make it our new Friday morning thing.  And you better believe she popped out of bed at 6am for our date this morning ♥

THREE – Clean Fridge //  I’ve told you before that Thursday nights are my cleaning nights.  I’m a crazy routine person.  I have certain things I do on certain days.  Like the carwash.  Grocery shopping.  Banking.  Peeps think I’m so crazy, but I live for routine + schedule.  Keeps me organized and happy!  Last night, for some odd reason, I had a burst of energy around 10pm.  (I was like, where the fuck did that come from?)  After most of my cleaning was done.  So, obvi I stayed up till midnight to clean out the fridge.  Pulled everything out.  Threw out anything expired.  Wiped down all the shelves and drawers.  Woke up at 4:30 am tired AF and my workout was almost impossible due to lack of sleep.  But, when I opened my sparkly clean fridge this morning, I realized it was all worth it.  And I’m officially and OLD, because I find this to be so incredibly rewarding.  Ha!

And yes, I have a second fridge in the garage to house all my booze + La Croix.
