{friday 5}

Hello and Happy Memorial Day Weekend.  Whoop Whoop!  A weekend with a little taste of summer, that I always look so forward to.  In true long weekend fashion, I plan to celebrate the long sunny days with my family camping.  Whether you’re hanging out at home or heading to the lake, it’s one of the best laid back holidays where ice-cold beers and barbecues are the priority!

I’ve got 5 things on my mind…..

 

ONE – Dinner Al Fresco // We had our first backyard dinner last night.  And celebrated #nationalwineday!  I gotta say, it was a good day 🙂

For Mother’s Day, Bay got me new chairs for our outdoor table.  I’ve been waiting and ready to sit around the table and enjoy a dinner.  Annddd #chradsohard.  It was probably the most perfect night we’ve had so far this year.  I made grilled pizza and it was legit.  Go to #2!

Dinner al fresco was one of the items on my {spring to-do’s}.  I’ve got 25 days left of Spring to cross off more of my to-do’s.  But, let’s be real…I’m already drafting my Summer to-do’s at the moment…Ha!

TWO – Grilled Pizza // I straight up, stepped up my pizza making game with this one.  Crispy, charred, cheesy goodness.  Once you have your toppings prepped, this comes together in just minutes.

Here’s what you’ll need:

  • 1 lb pizza dough (Trader Joe’s is the only way to go)
  • 1 lb fresh mozzarella, sliced or shredded
  • 3/4 cup pizza sauce
  • 5 oz pepperoni
  • olive oil
  • flour

Here’s what you do:

Remove pizza dough from package and allow to set for 30 minutes.  If you’re using Trader Joe’s.

Prepare toppings and have everything organized and ready.

Sprinkle a sheet pan with flour.  Using your hands, press or roll dough out into a thin rectangle.

To Prepare Grill: Using a paper towel soaked in oil, rub gates of your grill.

Carefully slide pizza dough onto grill over high direct heat.  Close the lid and cook 3 minutes.  Check to see if lightly brown.

Using tongs, flip the dough so it’s grilled side up.  Brush top of crust lightly with olive oil.  Spread pizza sauce.  Top with mozzarella and pepperoni.  Add additional toppings too!

Close grill and cook 2-3 minutes or until the bottom is crispy brown and cheese is melted.

As soon as you get the slide and flip motion down, it’s easy!

Try it!  Maybe over the weekend.

I didn’t realize that the thermos came out when I made her first lunch.  I shoved the sandwich in it…lol.  Bay couldn’t believe it when she opened her lunchbox at school that day.  She was cracking up when I picked her up, telling me what a blonde moment I had 🙂

FOUR – Target Top // Dramatic cold shoulder with embroidery?  Yesss!  And it’s $19 peeps.  The back is so good.  Scroll down (since I can’t take a picture of my back..Ha) and check out the image from Target’s website.  You can’t tell in this picture, but I paired this top with white denim and Tory Burch flip-flops.  This will be on repeat.  I can promise you that.  Just one more reason to make a Target trip this weekend ladies 🙂

  • Exciting news: I’m going to be a Tia to a new baby niece/nephew in November ♥

 

  • I went to Target yesterday.  Surprise, surprise!  I bought a really cute top and a popcorn maker, like the old school air popper one and I’m super pumped about it!

 

  • My recurring snake dreams are at an all time high.  EVERY SINGLE NIGHT!  So I googled it: a fear or an unresolved issue.  WTF?

{salmon blt sliders}

I’ve always been a sucker for a BLT sandwich.  Or is it that I’m just a sucker for anything with bacon?  Hmm?!!?  BLT’s are amazing as is.  Bacon + lettuce + tomato between two slices of toasted sourdough bread.   You’re thinking…damn Stacy, you are right!

You know I like to jazz up all the classics.  It’s just the way I roll.  I like to put a fun spin on everything.  Including my BLT’s.  Soooo, how about a piece of freshly baked salmon between those buns?

Ha…that sounds so inappropriate.  I should probably backspace that whole sentence out, but just how I like to jazz things up, I love being somewhat inappropriate just as much.  So, clearly i’m going to leave it right there.

And to even spice it up a little more.  Chipotle mayo.  Want to know a secret?  I’m slightly obsessed with mayo!  Sometimes (all the times) when I make Bay’s sandwich for lunch, I lick the mayo off the knife.  Yep!  One time, yearrrrsss ago, I’m talking like 12 years old.  My friends and I made a reality show.  We used one of those big ol video cameras that held a VHS tape and really recorded it.  I was in-charge of the commercials.  Obviously I did a mayo commercial.  I ate a spoon of mayo on air.  At 12 years old, I didn’t see anything wrong with this.  I soon came to learn that peeps thought I was a freak.  lol.  Now I keep my mayo love under wraps.  I know you’re never going to look at me the same, and I’m completely ok with that 🙂  I’ve only met a handful of fellow mayo lovers.  Andrea being one of them.  She just gets it!

{weekend notes}

Good morning and welcome to Monday’s Weekend Notes!  I woke up with a healthy dose of panic this morning.  My to-do list for the week is at an all time high in preparation for the long weekend.  Today I’m taking the advice I give Bay…..take it one step at a time and start with the most difficult item first.  Monday is always a bit of a beast, but Friday will be here before we know it and it will all be worth it!  Here’s to a productive day.  Hope you’re off to a great start!  Be a rebel and have a great day!

BAY THE BAKER //

Bailey was recruited to make the cake for Spencer’s Baptism Saturday.  She said YESSS, before she even knew what the baking task would be.

The naked carrot cake is back and more beautiful than ever.  I even invested in some new Wilton 8 inch pans.  Which made baking a breeze.

BAPTISM //

Baby Spencer was baptized over the weekend.  We were so happy to be a part of the special day.  Even though I got lost on my way to the church.  Ha.  Only me.  How do you get lost in Winters?  The after party was a good one, as always.

Man oh man, this week felt like it would NEVER end.  TGIF!!  What’s on the weekend agenda?  I made shit happen this week…clean car, full tank of gas, groceries purchased, yard work done, meals planned…which means only one thing.  I get to #chardsohard and lay out in the sun with every spare minute this weekend!  Whoop Whoop!

I’ve got 5 things on my mind…..

 

 

ONE – Cold shoulder for girls // I have to admit, I wasn’t sure I was down with this trend on my daughter.  Anyone other mamas feeling the same?  Don’t get my wrong….I’m all about the cold shoulder for me.  But, my 10-year-old?  I had to remember how obsessed I get with new fashion trends.  She’s my daughter…it’s in her DNA to love the same things I do.  So, I caved and bought her one.  No wonder Bay fell in love with this adorable cold shoulder flutter sleeve top.  Cute, Stylish + Trendy!

And those blue eyes….I die ♥

TWO – Grilled Mango Salad // Not really sure why I call this a salad?  Salads don’t have to contain leafy greens, right?  Think potato salad.  Or pasta salad?  Fruit salad.  So guess what I did?  Googled that shit…..

Salad

a cold dish of various mixtures of raw or cooked vegetables, usually seasoned with oil, vinegar, or other dressing and sometimes accompanied by meat, fish, or other ingredients.

Grilled Mango SALAD it is!

It’s the perfect combo of sweet, spicy, sour and salty flavors.  If you like a good kick, this is your salad!

Here’s what you’ll need:

  • 3 tablespoons fresh lime juice, divided
  • 1 jalapeno, thinly sliced
  • 1 red jalapeno, thinly sliced
  • 2 mangoes, cut into slices
  • Cooking spray
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 3 tablespoons sour cream
  • 1/4 cup cilantro, chopped (I forgot this ingredient and knew something was missing)

 

Here’s what you’ll do:

Combine 2 tablespoons lime juice and jalapenos in a small bowl.  Set aside.

Coat mango slices with cooking spray, sprinkle with salt + pepper.  Heat grill pan over high heat until smoking hot (literally).  Coat pan with cooking spray.  Add mango slices and cook without touching for 4 minutes.  You want nice grill marks.  Flip and cook 2 additional minutes.  Then place on platter.

Combine renaming 1 tablespoon lime juice with sour cream stirring till thinned out and smooth.

Spoon jalapenos over grill mangoes.  Drizzle with sour cream mixture.  Sprinkle with cilantro.   Serve with lime slices.

I served this “salad” alongside grilled pork tenderloin.  But, this would be a great taco Tuesday side, don’t you think?

 

 

THREE – Kaia Challenge //  Week #1, I believe day #1? (correct me if I’m wrong) We were introduced to the BRIK Kondition Kamp Challenge.  Holy shit!  It’s a tough one.  For me, personally, the toughest yet.   Jump roping + running are the devil.  Long story short, I’ve got maj bladder issues.  Like so maj that I’ve jumped though hoops the last year to correct and still no results.  Specialist + bladder therapy (I fucking swear it’s really a thing) + gadgets galore (TMI).   Debated for months about writing more about this topic…maybe when I finally find a cure I’ll be more inclined to share?  That means, probably never…ha!

Anyway, back to the challenge…..

Some days I feel like forest fucking gump and the next like a turtle that gasping for air.  There is no rhyme or reason to it…I just never know what’s going to happen when I hit the pavement.  From week #1 to week #3 I was able to shave 2:17 minutes off my week #1 challenge time.  I gave myself a damn high-five for that.  Ha.  Week #3 I must have had a forest day.  I was runnin!

{bay’s chocolate poke cake}

You guys, I’m going to share Bay’s new creation.  This is a REALLY good one too.  You’ve heard of poke cakes before, right?  True to its name, it’s a cake you poke holes in after baking.  The holes are then filled with a liquid filling, like pureed fruit + chocolate cream or how about pudding?  This method infuses extra flavor into every bite, while also keeping the cake very moist.  A good cake, is a moist cake.  Who’s with me?

Last night was GG’s 92nd birthday!  92 years old.  Crazy!

Anyway, GG has mad LOVE for chocolate.  Anything chocolate, really.  And you’ll never guess who was in charge of dessert?  Bailey, duhhh!

Bay knew it had to be chocolate.  But she also wanted to make another batch of her homemade whip cream for the frosting.  I love the way she thinks.

Think chocolate cake infused with sweetened condensed milk, with a layer of fudge.  Then topped with whip cream.  Sounds pretty good, huh?   Told ya!

Best part – this is a semi homemade cake.  It’s a box of cake mix jazzed up!
