{weekend notes}

Happy Monday Tuesday!  I had every intention of finishing this post yesterday and just tan out out of time.  So Happy Tuesday, it’s closer to the weekend so that makes it better anyway.

We had the best weekend!  I woke up feeling refreshed and ready for the work week.  Maybe because it’s a short work week?  Ha.  Either way, I’m ready for the week!

I hope you too got to enjoy the sunshine + friends + family + lots of cocktails!!!

 

You’ll never guess here we went Friday?  We went to Blue Note, again.   It’s for sure become our Friday night thing!  The whole family met for after work beers.  Some friends joined us too!

The kids played games + bought tons of girl scout cookies.  I may of had a few.  More like, a shit ton!  See the boxes sitting at the end of the table….farrrr away from me…lol!

Saturday morning we went to watch my nephew Joe’s basketball game.  It’s crazy how good these kids are.  Good game Joe!!!

Then we were off to the City for our fun Mom + Daughter + Grammy weekend!  A weekend away was just what we needed.

Minutes into the drive Bay proclaimed her love of nachos!  And I’ve always wanted to try Gracias Madre.  Honestly, I can’t even tell you why.  When we got to the ghetto, where this restaurant is located, we almost left.  LOL!  It looks like a hole in the wall.  Annnddd, how did I not get the memo that it is vegan mexican food?  Ha.

Thank god for the one man bad that played his guitar and serenaded Bay the whole time.  We were able to enjoy vegan margs + some not so nachos.  Only joking.  The food was actually really good.  Just not the taqueria  style Mexican food we had in mind.


The menu was “different” that’s all I can say.  We found some things to try…..

Flautas de Camote

Rolled crispy tacos with sweet potato and caramelized onion. Topped with guacamole, pico de gallo and nacho cashew cheese. Served with black beans and escabeche

Totopos with Tempeh Chorizo + Avocado

House made chips tossed in a creamy chipotle salsa roja. Topped with cashew crema and cilantro.


Everything was surprisingly delicious!  Especially the margs 🙂

 

The Painted Ladies // Our first time checking out these beauties.  One of the most photographed in San Francisco.  Also know as where Full House was filmed.  Really just the red doored home was shown in the opening credits.  Which is no longer red.  So sad!

Happy Dance!

Helllllloooo, Friday!

Thank you for showing your beautiful, sunny face!

Even though it’s crazy cold.  I see sunshine and I’m a happy girl ♥

You guys, this week was a frickin’ whirlwind, and I’m glad it’s over, to be honest!  It’s Friday and you know I’ve got 5 things on my mind, so here we go……

 

ONE – This weekend I’m surprising Bailey with an overnight trip to the city.  She’s got an idea that something is up.  I booked a room at the Fairmont, which is where we’ve always said we want to wake up at one day.  So excited to see her reaction.  Oh and I scored reservations at the Tonga Room, which she thinks is the coolest restaurant ever.  My Mom is coming with us and we have some other fun things planned.  She’s never been to the Golden Gate Fortune Cookie Factory or The Painted Ladies or Coit Tower.  The options are endless and I can’t wait for a weekend in the Bay!

TWO – #chardsohard // Nugget scored points once again  for accommodating my crazy cake decorating ideas.  How perfect is this cake?  If you look up the hashtag on Instagram, you’re likely to see quite a few photos of my homegirl Nikki + myself.  What can I say, we like to Char so hard.  Happy birthday Nikki!

{broccoli cheddar soup}

Yesterday at 4:50 am, I told Sarah that I was going to get my ass back in check and back on sugar-free.

Ha!

I went home and made broccoli cheddar soup instead!

In all fairness, Bay has been asking me to make it for over a week.  So I caved.  I totally could have eaten some chicken or a black bean burger.  But, you guyyysssss….this looked and smelled so good, I said F*@& it!

YOLO!

I’ve tried a few recipes and they all called for velveeta.  Don’t get me wrong, I love that cheesy goodness just as much as anyone else.  But, what if you use real cheese?  Or in my case, shredded bagged cheese..lol!  And how about no potatoes?  All the recipes I’ve used before are potato overload.  This recipe is in NOOOO way shape or form healthy, lite or Kaia friendly!!  It’s just good!  Kinda like Panera broccoli cheese soup.  Bay’s absolute favorite!

{weekend notes}

Hellloooo Monday!  I read somewhere, “Some days you make the coffee, some days the coffee makes you.”  Today the coffee made me!  I’d like to thank coffee for sponsoring this day!  I also think it’s safe to say, I’m the only person working today!!

I hope you all had a great weekend.  I spent the last couple of days with some of my most favorite chicks!

If you’re lucky enough to follow any of us on Snap Chat (HA) then you know we had a little fun Friday night.  Played a few games.  Girls – what was the name of it?  Big  _ _ _ _?  Anyway, we laughed our asses off.  Busted out some karaoke.  Danced.  Took jello shots.  It was a good time!

{friday 5}

Happy Friday friends!  It’s Friday, and as usual I have 5 things on my mind……

ONE – My girl // This morning as we walked out of the door for school + work, I squeezed her extra tight.   Knowing that I won’t get to see her face till Monday night.  Monday night!!!  Man, that is so long away!  I’m leaving today for a girls trip + she gets to spend time with her Dad.  He’s teaching her how to change the oil in a car.  Ha.  And she’s freakishly excited to learn.

 

TWO – #ootd // So I recently fell in love with Madewell all over again.  I hadn’t been in their store in a really long time, until I went to do a return for my homegirl Alex last week.  I wanted everything!  The jewels.  The shoes.  The tops.  The bags.  Everything!

THREE – Sweet Potato + Carrot Tots // You guys, these little fuckers are good!  Like whoa good!  A healthy alternative to the beloved tater tot.  Don’t even pretend like you don’t love tots too!    One sweet potato + one carrot shredded in the food processor along side some other goodies.  I served these as a side to our bbq turkey burgers this week.  Bay ate them without me even asking her too.  She said they were ok…but she prefers the real deal tots!  I, on the other hand polished these off for lunch the next day!

Here’s what you’ll need:

  • 1 large sweet potato, peeled
  • 1 large carrot, peeled
  • 1 egg, lightly beaten
  • 1/2 cup whole wheat panko breadcrumbs
  • 1/4 cup grated mozzarella cheese
  • 1 teaspoon salt
  • black pepper, to taste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika (one of my fave spices)

Here’s what you do:

Preheat oven to 375.  Line sheet pan with parchment paper or silpat.

Cut sweet potato + carrot into chunks.  Place in the food processor and process until finely chopped into rice-sized pieces.

Heat skillet over medium heat, spray with pam and add riced veggies.  Cook, stirring for 5 minutes, until softened.  Transfer to a large bowl and add egg + panko + mozzarella + onion powder + garlic powder + smoked paprika + salt + pepper.  Stir to evenly combine.

Using a cookie scoop, scoop 1 tablespoon of mixture then form into rectangular pieces with your hands.  The cookie scoop helps keep them all the same size.  Place on a sheet pan and spray lightly with pam.

Bake 10 minutes.  Flip tots, then bake an additional 12 minutes until brown + crisp.

{ranch chicken tacos}

Ranch chicken tacos are not only super easy to make, but they are ridiculously tasty too!  If you’ve got a ranch lover in your house (I’ve got two, me + Bay) then this will be a sure hit.

You guys, I’m not even lying when I say that we have tacos at least once every single week.  Sometimes two, if we have leftovers.  This week I decided to jazz up the ol taco Tuesday a little bit and this is what I came up with.

Yes, I used every shred of this chicken in all these ways this throughout the week.  Thinking about making this all over again to put over nachos….yummm!

{brik results}

Amen to that!  The last 6 weeks have been epic.  The numbers are not the only thing that matter peeps.  Although, I know it’s pretty rad watching them decrease over the weeks.  Besides the scale.  I believe my healthy-er lifestyle has greatly contributed to my mind + body + spirit.  Thanks to Kaia Fit Woodland, I’m stronger + healthier + happier than I’ve even been!  Physically + mentally + emotionally!  (trust me, ask my family + friends the can vouch).  Kaia helped my find my inner strength.  Sounds corny, I know!  My inner strength has always been there, I just lost sight of it.  I have since stretched + grown + expanded my comfort zone time and time again striving to improve.  And once again, the results are proof!

 

Ok, and now the numbers, since I bet half of you didn’t even read that first paragraph…lol!

I’m sure most of you have already read the results + seen the photos on the Kaia facebook/instagram pages.  I wanted to share a little more.  So bare with me…..

 

The first Kaia Fit Woodland 2017 BRIK session wrapped up last week.  It was one of the best, results wise.  Melika read off these numbers below at the Saturday Share the Love workout and my jaw dropped.

COMBINED…..

Over 250 lbs LOST

Over 300 inches LOST

86% of body fat LOST

GONE.  BYE-BYE.

You guys….that’s just this last Kaia Fit BRIK alone….we’re talking SIX weeks people.  6 weeks!  1 1/2 months!

January 2nd – February 11th!

Isn’t that crazy insane?
