While searching for a new chocolate chip cookie recipe, Bay found Picky Palate.  She had a secret ingredient for THE perfect cookie.  Say goodbye to flat chocolate chip cookies forever!

Although I haven’t tried one of Bay’s cookies yet, I have to say, they look amazing.  Might have to do with one of her two secret cookie baking weapons?  I can’t tell, but Bay has reassured me that they are the bomb.com!  So, I’ll take her word for it.

{what i ate}

What I ate?  #wia?

What happened to what I wore?  Ha!  If you follow my instagram stories, then you’d notice that I posted all my meals yesterday.  #hellafoodpics

I’ve been asked over and over about what I eat while on BRIK.  I’m currently right smack dab in the middle of a sugar cleanse, which seems to be a huge topic lately.  The question I get on a daily:

What the fuck do you eat?

Ha.  Food is always a topic when I’m dieting or cleansing.  ALL that’s on my mind is what I’m going to eat next.  My girlfriend Sarah and I email/snapchat our sugar-free meals to each other too…lol.  The struggle is real.

So, I documented yesterday.  Sorry for all you peeps who could give a shit.

Did you know that yesterday was ditch day?  I will not be attending ditch day.  Not yesterday, not today, not tomorrow.  I got goals!!!

First thing first, I start each day with a shot of apple cider vinegar (ACV) + a cup of hot lemon water.  Even the weekends.  I swear you get used to the ACV taste after a while.  I don’t mind it at all anymore.

Breakfast –

It’s ALWAYS the same.  Egg over easy.  1/4 cup roasted sweet potato.  1 cup spinach.  Salsa or tapatio.  1 tablespoon almond cheese.  2 slices avocado.

I literally could eat this everyday and never get sick of it.

I wish I could go back to rotation smoothies in the breakfast game, but I burnt myself out BIG TIME.  I decided that after my sugar cleanse, I’m going to try again.

I truly believe in the weight watcher rule: “if you bite it, you write it”  or in my case, log it.  I swear my My Fitness Pal.  And Mallory, my Kaia BRIK coach can view my food log and give me feedback.  (ignore the gin + beers Mal)

I’ve started a really, really bad habit of stopping at Starbucks (almost every morning) for a grande black pike.  I use my mobile app and either stop after the gym or have my sidekick run in and grab it for me.  They now know Bay by her name.  All bad.  Maybe when I’ve used all my Starbucks gift cards and have to start paying out of my own pocket, I will go back to homemade coffee?  We shall see.

{zucchini lasagna roll ups}

Low carb + gluten-free + kid friendly too!!

Think saucy + creamy + loaded with spinach!  Plus there’s no meat, which I promise you will not miss.  Obvi if that’s just not your thing, you can totally add ground sausage + turkey or beef.  Let me know how it is!!

This is basically a healthier option to the traditional lasagna noodle roll ups that everyone loves so dearly.  Definitely not lacking any of the traditional flavor though.  I hope you enjoy this recipe as much as we did.

The recipe itself is not complicated at all, but there is some prep work.  You first need to prep your zucchini, since it’s loaded with water and you want to remove as much as possible.  Then roast the zucchini slices afterwards.  Then your ready to rock and roll.  The rest is a breeze.  Just wanted to throw in that little tidbit, since I did not allow myself the proper time and ended up stressing the f out.

Good morning.  Happy Monday.  Happy MLK Day.  I’m sure most of you are home from work today.  I am not!  Ha!

Day #8 of sugar-free.  ONLY 12 days to go.  Not that I’m counting or anything.  It’s been a little tricky, but so far so good.

We had an eventfull yet relaxing weekend.  Just how I like them!

Friday night I celebrated my final 35th birthday dinner.  It’s officially over.  Thank you Sarah P for planning and Nidia + Toni + Rachel for coming to celebrate with me.  We don’t see each other nearly enough.  Love catching up ♥

And a big shout out to our server at Jinju Sushi!  That poor girl accommodated mine + Sarah’s sugar-free requests.  It wasn’t easy.  Sushi may be at the top of my list once I’m back to hittin’ the sugar again!!!

Can we take a minute to talk about Rachel?!?!  I love that she’s always rocking a new look or style.  I never know what hair-do she’ll show up with.  Always wearing something super trendy and cute.  But look at her scarf?  She draped it around her neck and let it hang on each side of her shoulder.

I checked out Asha Urban Baths.  I wanted to go last weekend and happy I didn’t.  The girl checking us in Saturday morning said the line was out the door.  With over an hour wait.  F that!  We pretty much had the place to ourselves, other than the Jacuzzi.  My sore body loved every second of this little oasis.

A warm soak is RELAXING and NOURISHING. A cold plunge is ENERGIZING and HEALING. Sweating in a steam or sauna is CLEANSING and SOOTHING. Quality time alone or with friends is RICH and REWARDING.

{friday 5}

Happy Friday from me + my little reindeer to you!  Friday the 13th to be exact!!  Hope you all had a great week.  I’m on day #5 of NO sugar and happy to report, I haven’t died or cheated yet.  Well, except the little bit of coconut milk I accidentally used in my soup.  Last night was rough though!  Bay + Ruby convinced me to get them a pizza for dinner.  PIZZA you guys.  Pizza is my bae.  My Boo.  My love.  Have to admit, I got them a Little Caesars, because it’s the only pizza I wouldn’t die for.  The smell of hot fresh pizza, clearly any pizza, makes me drool though.  Ha.  The struggle was real, but I didn’t have a piece.  I didn’t eat their crust.  I didn’t even pick off a pepperoni.  I’d say I’m doing pretty good.

It’s Friday and you know the drill!  I’ve got 5 things on my mind…..

 

ONE – Birthday dinner with the girls Wednesday night.  Sara + I are 1 day apart.  Lucky bitch will always be younger than me…even if it is only 24 hours..lol.  Anyway, we celebrate together every year.  Our families even managed to pull off a double surprise party for our 30th birthday’s.  I thought I was going to Sara’s 30th “surprise” birthday (she had no idea).  Turns out it was for both of us.  I’m still shocked they pulled it off without us figuring it out.  I remember right after the “SURPRISE” thinking, SHIT – I would have picked something else to wear had I have known it was my birthday too…Ha!  Sara – I love sharing our birthday’s together and hopefully our families have something really cool up their sleeves for our 40th since it will be here before we know it!!!  Thank you girls for treating us to a fun birthday dinner, even though we look like duds in this picture.  We can sit around any table, talk + laugh for hours.  It’s been proven!

And Kitchen 428 had Kaia friendly + sugar-free options for four of us currently on BRIK!

TWO – Affogato:

An affogato is a coffee-based dessert. It usually takes the form of a scoop of vanilla gelato or ice cream topped or “drowned” with a shot of hot espresso.

I made Bay a kid version of the affogato for dessert.  Hot cocoa + marshmallows with a melting snowman scoop of ice cream.  Doesn’t it look BOMB?  Make one for your kiddos this weekend for dessert.  They will love you forever!!!

Here’s what you do:

  • make a cup of hot cocoa (leave about 1/2 inch room for the topper)
  • add marshmallows, because it’s not hot cocoa without marshmallows.
  • using an ice cream scoop, make a perfect round scoop.
  • use any candies or sprinkles you have to make a cute face.  I used chocolate chips and an orange M&M for the nose.
  • place ice cream scoop in the hot cocoa.

 

It becomes a frozen hot chocolate!

{turmeric roasted cauliflower soup}

I realized, after writing yesterday’s post, how depressing it was.  I was in no way shape or form having or looking for a pity party.  I re-read it last night and thought….dammnnnn, that sucked.  Yes, I gained some weight.  Shit – Oprah said her average Holiday gain is 10 lbs.  So, I’m good with my 4 lbs.  I just wanted to share the truth.  The truth is, I’m human and my fitness goals are not easy.  This shit takes time!  I’m bound and determined to get back on tack.  Luckily I have all the tools right at my finger tips.  There is no doubt in my mind that my next results post will be my very best!

Just wanted to clear that up!

Ok, so now onto the recipe…..

If you haven’t jumped on the turmeric bandwagon yet, you really should.  Known as a superfood, turmeric has been used for centuries for healing.

Benefits of turmeric:

  • fighting inflammation
  • as an antioxidant
  • protects the heart in various ways
  • helpful for arthritis
  • braIn boosting
  • may be helpful for fighting diabetes + cancer

Reason enough to start adding turmeric to your day, right?  I’m sold!!!

I want to buy a bottle of turmeric and give it to everyone I love and tell them, “use this shit!”

Beyond all that, turmeric is a delicious ingredient when added to your favorite homemade dishes.

This is where I share the yummy soup that I found on Skinny Taste last week.

Turmeric roasted cauliflower soup.  I know, it sounds all healthy and shit.  But, trust me.  It’s good!  You could add some crumbled bacon.  Or pesto as a topper.  Make it yours!  If you follow the recipe as is, it is Kaia friendly + dairy-free + gluten-free, vegan + whole30 + paleo!  Dannnggg!

{weekend notes}

Happy Monday!  The weekend is gone.  I woke up STILL under the weather.  A lingering cold + a touch of the bottle flu.  But I have these beautiful tulips on my kitchen table that made me smile this morning.

I have officially started my 20-day’s of sugar-free.  So far so good….but, it’s still the morning.  Of the first day…lol.  I hear day #3 is going to be the hardest.  My homie Sarah P is doing the sugar-free diet with me.  I’ll keep you posted how it goes.

Ok, so about this weekend…..

My Mom and I went to the Tower Theatre to see Jackie.  Although I’ve read the awful reviews, I really wanted to see this movie.

Jackie is a portrait of one of the most important and tragic moments in American history, seen through the eyes of the iconic First Lady, then Jacqueline Kennedy. Jackie places us in her world during the days immediately following her husband’s assassination. Known for her extraordinary dignity and poise, here we see a portrait of the First Lady as she fights to establish her husband’s legacy and the world of “Camelot” that she created and loved so well.

I loved the reenactments of historical scenes, Jackie’s clothing and the iconic film clips.    Natalie Portman made a complete transformation.  She was great, but I was disappointed that they portrayed Jackie to be so unconfident, dark and distant.

I cant say I hated the movie.  It just wasn’t what I was expecting.

I did some meal prep in my new Calphalon cookware set (thanks for the birthday gift Mom + Dad).  Life changing.  I no longer have to spray pam in my pan to cook my egg.  It just slides right out.  It’s fucking mindblowing. Below I’m simmering a cauliflower soup that I will be sharing this week.  It’s Kaia + sugar-free too!!

I cleaned, chopped and roasted veggies.  Hard boiled eggs.  Packed lunches.  I think I’m ready?!?!
