I had to pay $80 this morning to keep blogging. Really? I couldn’t upload anymore pictures. All my gigs were used. I bought 10 more and I’m good to go. I couldn’t leave you all hangin! Haha!!
At least it’s Friday! And I have plans to eat Pho tonight. Soooo, that makes it a little better.
Friday 5 means I’ve got 5 things on my mind……..
ONE – Thai Pasta Salad // I swear I’ve shared this gem before?!?! I searched the blog and couldn’t find it anywhere. Just for good measure I’ll share it again. Because, it’s a keeper. A crowd pleaser.
My photo really doesn’t do it justice. It looks so boring. But, trust me – it’s NOT! This salad is packed with flavor. Sesame oil…need I say more?
Here’s what you’ll need:
Cook noodles, drain. In a sauce pan, stir in red pepper flakes, corn oil & sesame oil over medium heat for 2 minutes. Add honey, soy sauce and salt. Mix well with noodles. Cover and refrigerate for several hours. (I make mine the night before)
When ready to serve, add chopped cilantro, peanuts, green onion to noodles.
Sprinkle with sesame seeds and serve.
Is your mouth-watering? Mine is. My sister is making a double recipe for my Dad’s 60th birthday party this weekend….SCORE!!!

Could it possibly get any better? I think not! These two mugs are me….to a T! Best part, they come as a fucking set! These were just too good not to share.
I’ve been on a comfort food kick lately. I blame it on the weather. Speaking of weather…..I’ve got the best recipe for a cold rainy weeknight. Like tonight!
Chicken pot pie is like a big ol bowl of chicken soup wrapped in a hug. A crusty dough hug that is.
I was telling my homegirl Sarah P that I was searching for THE very best pot pie recipe. She said Pioneer Women. Duh, what was I thinking. P Dubb always has the ultimate comfort food recipes. A little butta neva hurt anyone, right?

Today I’m a fucking shark! I’ve been slacking with my health, fitness and pretty much everything else. Today is Monday and I’m ready to kick some ass. So watch out, I’m back in shark mode ready to show Monday who’s boss!!
The weekend was so nice. Did some shopping. Bath + Body Leaves candles were on sale for $9. Yeah! Lots of yardwork. Does anyone else find yardwork to be super rewarding? I like to pop open a beer and sit there and stare at it when I’m done. Like yeah, I did that. Haha. Tons of cooking + baking, as usual. Wine drinking, obvi! Movie + T.V. watching marathons. Sleeping in and kickin it in our PJ’s for longer than I’d like to admit. It was a good one.
Friday night was wine and catch-up sesh with my girl Nikki. She made the most beautiful + delicious charcuterie platter. And guess what, I didn’t take a damn picture. Unfortunately that’s how the rest of my weekend went too. No pictures. Like I said, I’ve been off the last couple of weeks….so not Stacy like.
Saturday morning football. Love watching Joe + his team play. And….they won. Their last game of the season was the best one!
It’s Friday BABY! So ready for the weekend! How about you? My boss gave be a bottle of Chandon pinot noir. If I had a bottle opener and a straw, I’d 100% open that shit up now at my desk! For reals. Honestly I didn’t even know Chandon made red wine, but I’m pumped to drink the bottle…I mean glass!

ONE – Look what I found in my lunchbox!!! Bailey always knows the best time to sneak in a little note to make my day. I vow to wear this bracelet till it falls off ♥
TWO – “HOLY SHIT” My response to the photos of this tree that fell on our Lake Tahoe cabin last week. When I got these pictures I couldn’t believe my eyes. My Mom + Aunt Penny spent the day in Tahoe cleaning everything up. And I’m happy to report….there was minimal damage. Just the deck railing needs to be replaced. So, so crazy lucky!! Thank god!
To me, snickerdoodles are the quintessential cookie. Not peanut butter. Not chocolate chip. Sugar cookies – no wayyyy! What makes them so special you ask? They are light and pillowy with a cinnamon sugar crust. Yummm! Not to mention, the dough….kill me now. So so good!
I grew up on snickerdoodles. Straight from the freezer. In an old Folgers coffee can. As soon as we walked into GG’s house, it’s the first thing we always asked for as kids. A snickerdoodle. Let’s be real, I still walk in and grab a cookie from the freezer to this day….and a bud light too. Weird combo, I know.
Anyway, I have my GG’s snickerdoodle cookie recipe that I make from time to time. Let’s be honest, they NEVER taste the same as GG’s. Maybe she left out some secret ingredient?!?! Hmmm. Now I have to ask…lol.
Target did it again! Got my ass! I even avoided the women’s clothing section.
Straight up beelined it for the grocery section. Then right there before my eyes….in the damn purse section, was this vest. My heart skipped a beat. Seriousness!
I tried to keep walking past, but I couldn’t. I just might possibly believe in love at first sight now?!?!

The spinach at the end makes this recipe healthy, right? Riiggghhhhtttt!!!
