I’m sure you’ve all noticed that shits about to get real here next week.  Recipes with tons of green + soups + smoothies + salads.  I will only post my tried and truly good ones, promise!  But, since it is almost the new year and I love my xoxo stacyb readers….I’m going to share two of my favorite secret bomb.com recipes.  Or maybe it’s because I wanted a reason to make them and indulge before next week?  I’m not telling 🙂

Good morning!!  Amplify BRIK is T-minus 5 days peeps.

You are never going to believe what’s in my mug this morning!!  Morning Tonic Tea.  Not coffee + Bailey’s Irish cream?  Say whattt?  I swapped my normal day-off morning beverage for a Kaia approved drink.  I’m telling you, crazy shit it going down at this house.

{avocado love affair}

I’m currently stuck in an avocado love affair.  Anyone else with me?  Maybe I need to purchase an avocado tree?  I stop at Pedrick Produce regularly.  They have the best deals….but shhhhhh, don’t tell everyone.

What’s worse than spending $3 on one avocado?  Getting home and it’s not ripe.  Pisses me off, big time.  Until I figured out how to do the ripeness test.

How to find the perfect avocado?

You have to do the ripeness test!

Before you purchase here is a little tip.  Remove the stem of the avocado.

Green – under ripe

It may feel OK from the outside, but the inside will be hard as a rock…..no bueno.

Dark Brown – overripe

When you cut the avocado open it will be brownish, sometimes smelly and super squishy with the pit un intact …gross!

Yellowish – just right

Avocado perfection.  The pit will be intact and it will have the perfect shade of green 🙂  Enjoy!

4 things you probably didn’t know about the Avocado:

  1. Avocados are a fruit…say what?
  2. An avocado has more potassium than a banana
  3. Speaking of bananas, avocados will ripen more quickly when placed by bananas.
  4. Avocados are one of a few, high-protein fruits.  That’s bananas!!

This high-protein, potassium loaded fruit isn’t just for topping salads, sandwiches and tacos anymore.  The options are endless!!!  Here are a few of my favs!

Guacamole..yes please!  I haven’t met a guac yet that I didn’t love.  This one is an easy everyday recipe.

What you’ll need:

  • 3 avocados
  • 1 lime
  • 1/3 cup red onion
  • 1 small clove garlic
  • 1 tbsp chopped cilantro
  • salt + pepper

Place the pulp from the avocados in a bowl and slightly mash with a fork leaving some larger chunks. Add lime juice, salt, pepper, cilantro, red onion, garlic and mix thoroughly.

It’s the most simple recipe and turns out perfectly every time.

 

Avocado Toast

I’ve already declared my love for avocado toast.  If you haven’t tried this yet, stop what your doing right now and throw this deliciousness together stat.  You will thank me later.

Here’s what you’ll need:

  • slice of whole wheat bread
  • 1/2 avocado
  • chili pepper flakes
  • salt + pepper

I don’t think directions are necessary 🙂

 

Baked Avocado Egg Bowls

(unfortunately I didn’t get a photo of the finished product, I ate it too fast…oppps)

Here’s what you’ll need:

  • Avocado
  • 2 eggs
  • salsa
  • salt + pepper

Preheat oven to 425.  Cut Avocado in half and scrape out some of the pulp.  Enough to hold an egg.  Place avocados on a lined baking dish.  Lightly dust with salt + pepper.  Break one egg into each avocado half.  Bake 15 minutes or until egg whites are set (be careful to not over cook).  Lightly dust with more salt + pepper.  Top with Salsa.  BOMB.COM!!

 

Avocado Tomato Cucumber Salad

What you’ll need:

  • 3 roma tomatoes
  • cucumber
  • 1/4 red onion
  • 2 avocados
  • 2 Tbsp EVOO (extra virgin olive oil)
  • 1 lemon
  • Cilantro
  • Salt + pepper

Directions:

Place chopped tomatoes, sliced cucumber, sliced red onion, diced avocados and cilantro into a bowl.  Drizzle with EVOO, 2 Tbsp lemon juice, salt + pepper.  Toss gently to combine.

I’ve seen avocados in baked goods in lieu of butter.  Crazy, huh?!?!  In smoothies, dressings and sauces.

Man, I hope I’m not the only one currently living in this avocado love affair??

{weekend notes}

I hope you had a fabulous weekend enjoying your family traditions 🙂

I’m home all week….NO WORK!  Can I get a whoop whoop?!?!  I don’t have to set an alarm.  Bailey is so excited and so am I.  We plan to get pedi’s + shop + sleep-in + watch movies.  I rarely have time off, so we plan to enjoy it to the fullest!!!

The Holiday weekend came and went….just like that.  The hustle and bustle wasn’t too bad either.  We were able to fully enjoy all our family, even while doing a little Holiday traveling.

Christmas Eve was spent with the Timothy’s.  Uncle Sal + Aunt Penny hosted the whole family, which is a large crowd.  Dinner + Drinks + Family + White Elephant…..and SANTA!!

GG even sat on Santa’s lap this year!!

Her smile makes me smile 🙂

 

And the kids got a turn too……

The past two Holiday seasons, our family has joined for a night of caroling.  It all started last year, when our GG (great-grandma), my grandma, was recovering in a rest home for a few months.  She loved it.  I loved it.  The kids loved it.  Shoot – I think everyone loved it.

We did it again this year.

Betsy Baccei, GG’s dear friend since 2nd grade joined us too.  She told us Winter Wonderland came out when they where 10 years old.  Betsy remembers her teacher teaching them the song for the first time.  Pretty cool, huh?!?!

I always run to the store Christmas Eve to grab that “oh shit, I forgot to get a gift for…”  Anyone else with me?  I have a few clever ideas to help a sister out.   Need a grab-n-go?  Or how about a cute printable to slap on a last minute gift?  I swear a printables makes it look handmade or at least that you put a little thought into it, right?

With that being said, it’s time to get my shit together!!  2016 is almost here.  I’m not a big New Years Resolution person, but I do like to set goals for the new year.  #1 (again) healthy.  Not skinny!  My ass just wasn’t built to be skinny.  Healthy to me is the way you feel.  I sure as hell do not feel healthy right now.  I love to workout, don’t get me wrong.  Since having Bailey (9 years ago…lol) just working out, just doesn’t cut it anymore.  I have to be mentally in it too.  It has to be a lifestyle in order to get the results I’m looking for. I have to cut out the junk food, control portions and wine (this is the hardest part).

…..because it’s a short week!!!  Yessss.

Can you believe it’s Christmas week?  Yeah, me either.  I was thinking yesterday, I’m not the slightest bit stressed this holiday season??  I budgeted and purchased early, which helped a lot.  I just feel very calm and relaxed…this hasn’t happened in years.  I’m going to embrace it, friends!

High-Five friends….IT’S FRIDAY!

 

ONE – I made these adorable mini rosemary wreaths for my dinning table.  They make me happy 🙂  I have a big ol’ rosemary plant in my backyard and I’m always trying to come up with different ways to use it up.   I’ve seen this creative non food way of using them before and thought I’d give it a shot.  IMG_2169.JPG

Want to make some for your Christmas table?

Here’s what you need:

  • Rosemary
  • Twine
  • Scissors
  • Floral Wire (optional)

You will need long sprigs of rosemary for this project.   About 8 inches long.  I first soaked my rosemary  in a water bath to make the sprigs more pliable.  Be careful when bending into a circular shape, as the sprigs can snap.  Once you’ve created your wreath, tie a little floral wire to secure.  I didn’t have any wire on hand, so I tied my twine to hold the two ends together and it worked perfectly.  The floral wire would have made it easier though.  Tie a pretty little bow and you are done.  I practiced with red + white twine, which was super cute but didn’t match with my white and gold color scheme.  I set them on top of my folded napkins.  You could totally tuck your napkin through the center and use as a napkin ring too.  So many possibilities.
